High Carb Hannah's Corn Chowder Recipe:
1 cup red lentils
2 cups vegetable broth
1 can coconut milk
1 lb frozen corn
1 bell pepper chopped
1/2 onion chopped
1 tsp chili
1 tsp garlic powder
1/2 tsp cumin
(And I also added a little salt.)
Throw all that in an instant pot and cook for 25 minutes.
Then blend lightly with an immersion blender.
