Tiandra: hopefully, You would not mind my asking the question: when making vegan mayo what is the best coagulation - congealing - solidifying agent? There is no pectin around here… The vegan mayo I make tastes all right, but it is too thin, too liquid… The other day my mother’s attempt to create vegan mayo was a total fiasco… But I added some cranberry sauce, and guess what? It became the perfect cranberry mayonnaise!!! Possibly, because there was pectin in the cranberry sauce. Then I tried to add to mama’s fiasco simply some potato starch …and it did not work… Corn starch, potato starch can they be good coagulators? With lots of vegan love & sympathy, Petr
