It’s unique to the country and not to a race.
Nice it came out great. There are lots of variations of this recipe. As a Sri Lankan myself, I haven't ever added ghee, Indian bay leaves, soy sauce or added spices un-roasted. But definitely lots of black pepper and thick tamarind juice and ground Garcinia. ( That's where the sourness and black color comes from. Also helps curry last longer at room temperature ). I guess that the ultimate essence of curry is it is customized to the taste and liking of the individual. It is meant to be customized. This one looks great 😍
I like this recipe, made slight changes. Used roasted Sri Lankan curry powder and tomato paste instead of the dry powder/chopped tomato. I also cooked on med-low heat until the gravy was gone and it was more dry/oil separates. It takes much more time but for those who are willing to try, it is worth the effort.
We never use bay leaves ,but we use cuury leaves and pandan leaves ,to make curry ,if you want to make black chicken curry ,make rosted curry powder not soy sauce cumin seed not into the oil we dry rosted all this seeds (cumin,fennel seeds ,fenugreek seeds,cloves , black peper , cardamom ,mustard seeds, coriander ,rice, ) .and we use coconut oil in srilanka ,to make eny dish but you can use any cooking oil,any way, i like your recipes

As a Sri Lankan I tried this recipe and came out wonderfully. 😊 Soy sauce is bit traditional ingredient, but I think they add it in restaurants for colour and flavour.

That meat benefits from long cooking and a lot of seasoning. This customized recipe is better for cooking farm raised fryer chicken we find in supermarkets nowadays. Also, if you are worried about overcooking chicken, just marinade pan seer and remove the chicken. Make the sauce with curry paste and coconut milk in the same pan and add the chicken pieces during the final 15 or 20 minutes. ( Just enough time to cook it through). It will come out just as great.

We have only two spice powders in SL. Roasted and unroasted curry powder. You are guiding your viewers wrong. We DO NOT use cumin seeds, bay leaves, ginger garlic paste, soy sauce, ghee, coriander powder or cumin powder (which you didn’t add) in our cooking. That’s very indian. The black colour comes from a curry powder called badhapu thunapaha which is Sri Lanka’s own spice powder, it’s made of a combination of spices with different ratios, and is roasted. It is truly disappointing when foreigners cook Sri Lankan food and make it so far away from the real thing. You are teaching the wrong thing to people and guiding them wrong. When i cook indian food i do soo much of research on google and watch several videos on UA-cam by Indians and then make it as authentic as possible. And you having a youtube channel are teaching people the wrong thing. So disappointed. Do you research please if not stick to cooking food that you know for sure.
