A Trip to the Santarepa Cafe in Santa Fe, New Mexico / How to Make Venezuelan Arepas Pabellón

- This video shows my first on location shoot at the Santarepa Cafe, a Venezuelan restaurant located in Santa Fe, New Mexico, as well as my own effort to make Arepas Pabellón at home.
Arepas Pabellón are crispy cornmeal cakes stuffed with shredded beef, black beans, sweet plantains, and cheese. It is modeled on the Venezuelan national dish, Pabellón Criollo, which includes all of the above elements with a side of rice.
I want to acknowledge the owner of the Santarepa Cafe, Isabelle, who granted permission to shoot at her restaurant, and participated in an interview shown in this video. I appreciate her confidence that we would do professional work on our first location shoot for the channel, and I am so glad her restaurant is the first to be featured on my channel.
I am also delighted to introduce my viewers to arepas, as it was a food I was not aware of prior to visiting the Santarepa Cafe, and I am curious why such is the case. Frankly, it deserves as much interest as empanadas and pupusas amongst Latin American cuisines, and if I can give it a boost by presenting it on my channel, I am pleased to do so.
The arepas I tried at the Santarepa Cafe include the following:
La Vegana Arepita - a mini vegan arepa with avocado, black beans and sweet plantains.
Pabellón Arepita - a mini pabellón arepa.
Pollo Mechado Arepa - an arepa filled with shredded chicken.
But while at the Santarepa Cafe, I was also impressed by the other foods I tried in the sampler, which include the following:
Cheese Cachapitas.- sweet corn pancakes with cheese on top.
Empanaditas - similar to Argentinian empanadas.
Pastelitos - small pastries stuffed with meat.
Pataconcitos - small sandwiches with crispy fried plantains as the outer element, with meat as the filling.
Tequeños - fried cheese sticks.
Yuca fries.
Sweet plantains.
When making Arepas Pabellón at home, I used the following primary ingredients:
1 lb Beef Chuck Roast
1 ripe Plantain (it should be black for maximum sweetness, and fried in 1 tbsp cooking oil)
1/2 cup Shredded Cheese
1/3 cup Black Beans
When preparing the meat, use the following ingredients:
1 Onion
3 crushed cloves of Garlic
1/4 bunch Thyme
Salt and Pepper to taste
When preparing the sauce for the meat, use the following ingredients:
1 Green Bell Pepper
1/2 Red Bell Pepper
1/2 Onion
4 cloves diced Garlic
1 tbsp Cooking Oil
1 tsp Oregano
1 tsp Cumin Powder
1 tsp Garlic Powder
1 tsp Salt
1 tsp Black Pepper
1 cup Tomato Sauce
2 Bay Leaves
When preparing the arepa dough, use the following ingredients:
1 1/2 cups Warm Water
1 tsp Salt
1 cup Pre-Cooked White Corn Flour (brand name "Pan")
It was a spectacular way to end my trip to Santa Fe by visiting the Santarepa Cafe and enjoying the Venezuelan feast I shared with my family. If you live near Santa Fe or happen to be visiting, you should make time to have a meal there. But if you are unable to do so, I hope you will try making arepas at home, and feel free to experiment with the fillings, as the Venezuelans do!
