Annie's Dad has been making his own maple syrup for a decade now, and his hobby has turned into a side business, selling the delicious Michigan Maple Syrup. Vermonter here! Where the best maple syrup in the world is made. Late in the season is when the sap is the sweetest. Ideally, the weather has to freeze at night and warm up in the sunshine the next day. Most people are amazed it takes 40 gallons of sap to boil down to one gallon of syrup. We call our maple syrup liquid gold here. We put it in everything. Baked beans, oatmeal, a glaze for carrots (butter and syrup cooked down to a glaze) baste our hams with it, and, of course, french toast. I could go on and on...lol.

That was so interesting. Thank you for doing this. And Thank you to your Dad for doing such a thorough job of explaining the process. I was not aware of the affects of the temperature fluctuations on the sap quality. I was aware that a person needed so many gallons and why I have never tried it on the trees here - some folks just tap to drink the sap and a health tonic. Again, very interesting.

Thank you for this video! Your Dad is a natural teacher! We are in CT and we tapped three trees for the first time. We got just over one gallon of syrup. My husband built an outdoor oven out of cinder blocks where we did the evaporation with a wood fire and then I finished it in the kitchen. It was a long process but very rewarding!
Here in southern Mn we just got done our syrup. I am glad we decided to start it early because now the trees are budding and had we waited until our usual sapping time we would have missed the season! The weather this year has been insane and very warm on and off. The finish cook we go to 217.5 due to our elevation. It is a shame that most people cant imagine the rich flavor of home made maple syrup. It is so rich, buttery, nutty and smooth! Thanks for sharing!

Does the sap have to be boiled down? Can you just store and then use it as is?
You have to either process it, freeze it, or pressure can it. They will eventually go bad if you just keep it in the fridge or on the shelf. Some people keep it in the sap state as a natural electrolyte type product.
