This looks like a scrumptious summer dessert. Since it's based on a pina colada, I think putting a few maraschino cherries on top would give this a pop of color and fun!

I was thinking the same thing myself
I'll just put red cherries on mine. Maraschino cherries causes cancer, someone told my mom. My dad made me eat it cause cherries are good for me.

I made this for my wife and she loved it!! (we couldn't wait the full 4 hours to have a piece so we had a piece after 2 hours--I'm sure it will better even better overnight!) The only problem I had was that the crust was crumbly and not firm. Should I have added more butter? Thanks again for sharing the recipe!
The crust will have some crumble to it, but if it didn't set up at all then it could've not been mixed well enough, or not enough butter.

I've only used the rum flavoring.
I would also use half coconut cream & half whipping cream .
