What would be your thoughts on which way is better, to do the vanilla sugar this way or to dehydrate the beans and powder them and add to the sugar? Does it keep fine when you add them wet? I would guess the flavor would go farther the way you did it.?.
Good question! I think you would get more out of dehydrating, grinding, and adding the vanilla beans to the sugar than infusing. Since sugar is a preservative, the beans keep just fine in it 😃 ~ Anja
I have always found that you have to dry the vanilla bean first before adding raw vanilla beans. In a couple weeks I would have a sugar brick if you don’t dry the beans first.

Here is a tip for you. Take 1 cup sugar and 1 dry Vanilla bean. Break the bean in 3-4 pieces, add the sugar and grind to a powder. Keeps indefinite and won't clump together. Don't dry the bean in the oven as high heat makes it bitter. Air dry is best but may take awhile.

Also, hier bekommt man den oft als Cpt. Morgan, aber Du kannst auch ganz normalen Rum oder sogar Vodka nehmen. Ich mag nur halt den Geschmack vom spiced rum 😊 ~ Anja
Yes, I actually like the more complex rum taste but you can make make the vanilla extract with vodka, too, if you prefer a "cleaner" taste. Hope this helps 😊 ~ Anja

I've had good luck getting vanilla beans at the local health food store in the bulk spice area. MUCH less expensive than at the grocery store.

You can simply exchange 1tsp to 1TBSP of sugar for the same amount of vanilla sugar. Hope this helps!
Do you ever remove the vanilla beans from the extract?
I just leave them in there but you can take them out once you are happy with your extract. Hope this helps ~ Anja

6:56pm. Is the rum actually alcohol? Or just a rum flavoured substitute?
I am using rum but you can also use vodka or whiskey. You can use one part water and 3 parts glycerin if you want to avoid alcohol 😊 ~ Anja
