Hi! Chiming in to say I LOVE YOU GOLDILOCKS! I have two of their skillets and one of them had a rivet burst, I sent a picture in and they had a brand new pan in the mail the very same day! No other issues and they are my daily use pans.
I am SO making these for NYE, and I am SO doing them fondue style with the sauce in the fondue pot and the potatoes on the side. OMGBECKY! Thank you for being your awesome Carla self. 🙏
You're absolutely right, Carla! True, initially I recoiled from the steamer, but then you listed the many ways steaming mitigates the issues plaguing the failed roast tater. I am a tater-steamer now ✅
This potato insanity kinda reminds me of papas a la huancaína, especially with the addition of the spicy peppers at the end. It is an amazing and delicious Peruvian appetizer / cold potato salad type of dish and it is the best thing.
I see this potato dish as my dinner this weekend. Also, I buy those peppers regularly and they are worth every penny. They even go into one version of chx salad and a tuna anchovy pasta with lemon.

I don’t know why people complicate béchamel. After the roux, I always dump the entire quantity of fridge cold milk. Whisk as it comes to the boil. Never any lumps or issues.
Carla suggesting Provel cheese, but I heard Rotel...and thought hey why not invite to the potato party. Fall fondue vibes, too. (I swear I wrote this two seconds before Carla said take it to Swiss Alps.) Sauce would also be magic over cauliflower, broccoli, or cabbage. So cozy! So enrobed! Wait...one more: drizzle sauce over warmed apple pie? (Also see fondue with tart apple slices).
Love the quality of the Goldilocks pans -- however, I am not a fan of rivets on the interior of pots and pans. They trap food. They make stirring more difficult. They are hard to wash. And they never get clean. I don't understand why everyone from All-Clad to Goldilocks insists on rivets.
@@kkattrap Agreed. Again, I am talking about external rivets, which can be applied to the outside of the pan, and not drilled through the pan itself. It's more difficult to produce, and therefore, manufacturers today don't often do it.

We had a non-riveted pan give up it's handle at an inconvenient time. I'll deal with the rivets before I ever clean up that level of mess again.
