Hey Allison, my wife sent me here to help you with your coffee! I’ll start with saying I’m Alex and I own a speciality coffee roastery here in Portland. I’ve also worked in speciality coffee for a long time. There are a few things that I will mention that will help explain why the shot is pulling the way it is. The first, and most likely reason, is due to channeling in your puck. So water essentially is finding little micro tunnels and running through there, giving not only a mess but also, not extracting fully. Another aspect I’ll mention is that although your grinder is on the finest setting, it may not be fine enough. Although super cute (according to my wife) those smeg grinders do not have the best burrs or range. With that, all coffee’s are different from roast profiles to bean density, therefore you’ll have to “dial in” or adjust those grind size variables to cater to each bean. The first and cheapest tool you can buy that will help is a WDT tool which is a little stick with bunch of tiny needles that you can use and distribute your coffee more efficiently and evenly. Pretty much you’ll hold it and declump and stir your bed of coffee in the portafilter after grinding and before tamping. I see you have a distributor tool on your tamp, which is cool but it’s not the most effective unfortunately as it can not distribute or break down any clumps or sections in the bottom of the portafilter. The WDT tool is like $10-$20 and will change your shots completely! You can find them on Etsy. This will also help with getting ride of channeling. Another thing would be the grinder. Getting a good hand grinder or a nice espresso specific grinder can help as well. But that’s not to say it’s needed, as I see you have a Smeg. If you wanna keep the smeg I would try to weigh your dose in and put more coffee in possibly to slow flow rate of water. For me, a shot should be around 27-32 seconds with 18-20grams in and the shot should pull about anywhere from 30-40grams out. You can buy scales for coffee specifically or just use a little kitchen scale. Finally, getting locally roasted, speciality beans that have the roast date on them will help. Let coffee sit in the bag sealed for 1-2 weeks after roasting and then consume it. Do not open the bag to smell, just let it sit as the bags will have little valves to let them degass. This will get all that roasty flavor gone and let the sugar enzymes from the cherry / bean really push through the flavor profile! And lastly, have fun! Coffee is such a fun hobby. A little tip for the pesto. You'll need double the olive oil and give it a good blitz in the blender and it will be really smooth and creamy. Just keep adding the olive oil until your happy with the consistency. Happy cooking 💚

Allison, my husband and I also have a Breville! You mentioned the bean freshness, and I think that could be part of it! After our coffee studying, we stopped storing our bag of beans in the hopper of the grinder. We bought an airtight coffee container from Fellow, and then we weigh the exact amount of coffee we need into the hopper to grind each time! Maybe that will be helpful :)

A friend gave me a monarch chrysalis in a jar, it was like a jewel! It was turquoise with gold on it, so gorgeous. Then it turned dark and the butterfly emerged and I could watch it fly off. Good luck with yours. It is so cool to watch.
Hi Allison! I don’t know if you’ll see this but I used to work at a coffee shop and I’m betting the chaotic espresso pulls are because you’re not tamping the espresso after you use the distributor. (Tamping is basically just using a device to apply weight and pack the espresso down in the portafilter). Super important when you use a bottomless filter so that the water can flow through the grinds evenly (otherwise it sprays everywhere like you’ve seen!) If you look on Amazon there are some super cute wooden tamps that would like nice with your setup! Also I’d recommend watching a technique video before you use it- you’re supposed to apply 20-30 pounds of pressure and if you hold the tamp the wrong way you could potentially hurt your wrist. Anyways I love your videos and I’ve loved watching your coffee journey! I hope this tip helps!! 💕

Alison.. If you love a the classics then look online and buy the BBCs adaptions of the different books.. I probably have them. They are long because they stay true to the books... But they are beautiful. .. Also I use my blender for pesto. It works perfectly. Don't add the cheese until the end.. First blend the Basel and garlic. Add water if not sloppy enough. Then Add the pine nuts. Then add Parma-cheese at the end. Fun vlog
Hey Allison! If that happens again with the pesto you can add a little more olive oil in at a time until it blends a bit smoother. You may also want to adjust the lemon and the salt to taste if you do that! Hope that helps 👩🏻🍳🌿❤

With the filter, honestly it could be the grind size. For our espresso maker we had to get a special grinder to get the grinds small enough. We actually use an espresso hand grinder!

Your grinder seems to be for drip coffee only, espresso grind I much finer and typically requires an entirely separate machine! Maybe try the breville smart grinder (i believe it’s called). The water is flowing through the grinds way too fast rn which means the grind needs to be finer- this would help stop the splashing lol. Good luck!
As a retired barista of 7 years- to get a better pull this is what you want to aim for: accurate grams in your portafilter. Most have a capacity of 17-20g of coffee, but you should be able to find your specific ones capacity. You want to tamp with about 30lbs of pressure. This can look like leaning on the tamp when you are a smaller person. With the proper grind size, ratio of coffee, and a good tamp, your shot should take 28-30 seconds to extract. This will leave you with thick crema and a beautiful taste. Good luck! Keep adjusting grind size and tamping pressure until you hit that desired time. One last element could be that your espresso machine doesn’t get the water hot enough, which in that case you just gotta work with what you’ve got. Best of luck! :)

For the bottomless filter, I would try increasing the grind size! It might be splattering because the beans are too finely ground and the water gets stuck and can’t pass through smoothly. I have one too and it took a ton of trial and error! 💕

Hi Allison! Wanted to help you out with your espresso shot. Your grind size is too coarse. It does need to be more fine. As well as I recommend weighing out your shot. Making sure you don’t have too much coffee in the portafilter. I can’t tell from the video but you may be filling your basket too much which won’t allow you to tamp hard enough. Make sure you’re putting roughly 30lbs of pressure on your shot. Hopefully these tips help. ☕️

Hi Allison! I highly recommend trying freshly roasted beans from your local coffee shop (Whole Foods also has these, look for a roast by date instead of best by). This made a huge difference for me in my espresso journey! Best of luck :)
I’m determined for you to get a good shot with that portafilter. How many grams are you grinding? I’d start with 19grams and tamping down the coffee firmly, you can adjust the tamping tool if you feel like it needs to push down more. Let me know if you have any concerns going forward but it was nice to hear that you at least got better crema

Your grinder seems to be for drip coffee only, espresso grind I much finer and typically requires an entirely separate machine! Maybe try the breville smart grinder (i believe it’s called). The water is flowing through the grinds way too fast rn which means the grind needs to be finer- this would help stop the splashing lol. Good luck!

As a retired barista of 7 years- to get a better pull this is what you want to aim for: accurate grams in your portafilter. Most have a capacity of 17-20g of coffee, but you should be able to find your specific ones capacity. You want to tamp with about 30lbs of pressure. This can look like leaning on the tamp when you are a smaller person. With the proper grind size, ratio of coffee, and a good tamp, your shot should take 28-30 seconds to extract. This will leave you with thick crema and a beautiful taste. Good luck! Keep adjusting grind size and tamping pressure until you hit that desired time. One last element could be that your espresso machine doesn’t get the water hot enough, which in that case you just gotta work with what you’ve got.

For blending the pesto i Would recommend and immersion blender 😊 and use a lot of oil

For the bottomless filter, I would try increasing the grind size! It might be splattering because the beans are too finely ground and the water gets stuck and can’t pass through smoothly. I have one too and it took a ton of trial and error! 💕

Hi Allison! Wanted to help you out with your espresso shot. Your grind size is too coarse. It does need to be more fine. As well as I recommend weighing out your shot. Making sure you don’t have too much coffee in the portafilter. I can’t tell from the video but you may be filling your basket too much which won’t allow you to tamp hard enough. Make sure you’re putting roughly 30lbs of pressure on your shot. Hopefully these tips help. ☕️

Hi Allison! I highly recommend trying freshly roasted beans from your local coffee shop (Whole Foods also has these, look for a roast by date instead of best by). This made a huge difference for me in my espresso journey! Best of luck :)
I’m determined for you to get a good shot with that portafilter. How many grams are you grinding? I’d start with 19grams and tamping down the coffee firmly, you can adjust the tamping tool if you feel like it needs to push down more. Let me know if you have any concerns going forward but it was nice to hear that you at least got better crema
