I am Thai. I m buffled how he made sauce. We never used Parika. Obviously, he add it up to create nice colour. The sauce is mainly balanced tamarind juice, palm sugar, fish sauce, fried shallots cooked together until it gets thicken. Not just mixing. No cann sugar. Srirach sauce is only optional choice of extra seasoning after the food is cooked but not used as main cooking sauce. His method is fair nice for fixing hard find ingredients. I live in London I can still manage to find a proper ingredients. He is still better than Jamie's Oliver.

Just started watching his videos and can't stop. I love his simple yet thorough way of explaining everything. Even his "warm water" example was so great. I also like how he gives you alternative ingredients in case you have trouble finding what you need.
I've seen him make this recipe on another website and he suggests doubling or tripling the sauce recipe and leaving it in the fridge. I've done that and it works great! I leave mine in a squeeze bottle, that way I'm ready to use it any any time.

I've watched all the Chef Jet Tila's Pad Thai related videos 3 or 4 times. Bought all the ingredients and wok and followed the steps precisely - successfully made a very delicious PadThai for the fist time (I do not cook usually). I was surprised that I actually made something that smells and tasted exactly like a real Pad Thai I've had in good Thai restaurants and even better. Now I will be mastering this further. Thank you so much. I found too many recipes online that has strange suggestions and even ingredients like ketchup, I kid you not. Then I realized I was looking at Thai recipes made by an Ashley for her toddlers or Derrick who travelled to Asia once. That was my first mistake and I’m Asian! I made this tonight for my family and they loved it. My first time making Thai cuisine and it was all thumbs up. They said now on Tuesday and Thursday will be Thai food for dinner.

My favorite Thai restaurant here in Christchurch, NZ had to close down due to fire. I had been going there for twenty years and I loved the owners and their wonderful food. So to find this pad thai and it looks simple to make, has given me the motivation to try making it myself. Thanks Jet. I could practically smell it. Yum.
Okay, so I made this tonight. I made it with chicken breast only and it turned out pretty tasty with a few tweaks. Read below Things I liked, things I changed, things I’d do differently. Things I liked -Soaking the noodles for an hour yielded the best rice noodles I’ve ever had. Perfect. -The baked tofu. I had to guess at the market which one was baked just based on how it looked, but it was very tasty! I picked one that I thought looked like what he used and a product of Thailand. I couldn’t not find something that specifically said “Baked Tofu.” I guess I got lucky! -The order in which he cooked everything made the dish come out cooked perfectly. -Once you prep everything this comes together really really quick. So have everything prepped and ready to go! -Not cooking the chicken to death in the beginning meant good moist chicken at the end. Things I changed -I couldn’t find garlic chives, so I used scallions (white part chopped fine and added when I put the garlic in. Green parts large bias cut towards the end. I used 4, wish I had used 6). -I only had chicken breasts and did not use raw shrimp. -For some dumb reason I thought I would be all authentic and use (and forgive me I can’t remember the name of it) a block of raw sugar. You know, the kind that sometimes comes in a cone that you have to grate. Dumb. And also I think it meant that I did not add enough sugar to the sauce (aka, the sauce wasn’t that perfect balance. I tasted the sauce before cooking and thought it tasted good. When combined with everything it was screaming for sugar...I just kept sprinkling white sugar in the completed Pad Thai until it was balanced, but that felt weird). -I couldn’t find roasted peanuts without salt, so I got raw peanuts and roasted them in the oven (350 for 10-15 minutes...mine were just barely done and I took them out of the oven at 12 minutes because the keep cooking). Honestly, freshly roasted peanuts smashed with a pot were worth it. Yum. Things I would do differently -Use regular sugar -Use less noodles (Pay attention to the recipe. I thought it was one package of rice noodles. Nope, it was about 1/2). -I didn’t think the dried shrimp or the pickled radish added anything. Seriously not worth the money for what they added. Seriously. -Be light on the Sriracha. I got a delicious garlic chili paste, but the recipe makes it just hot enough for my liking. Would have liked to have been able to use a little extra as a condiment. -Maybe it was the amount of noodles I used (I mean I did stop adding them when it looked ridiculous), but this dish by recipe need a good 2 extra cloves of garlic. Or maybe it was the lack of Garlic Chives? But it needed garlic. I used 2 cloves through a press after everything was cooked. (Again kinda weird, but it really needed it) Now I have all the ingredients, I’ll make it again and I’m sure it’ll be better.

I made this when I was first starting to really get into cooking. I think it’s the best pad Thai I’ve ever had. I tried finding that grocery store when I was in LA but I couldn’t find it. Now that I’m much better at cooking I plan to make a vegan mock duck one since my partner is vegan. Looking forward to this! If you’re reading this Jet, thanks for giving me such a great recipe. Looking at this now it’s easily doable but at the time it was the hardest thing I’ve ever cooked up till that point.

Ok I made this today and let me tell you it was delicious. I’m used to buying already made sauce for convenience purposes, never again. The only ingredient I did not use , because I couldn’t find it, was the dried shrimp and it was still delicious. Very easy to put together. The noodles where perfect, did them the way you showed. Fun fact: Pad Thai is actually a Southern Chinese noodle dish packaged as a Thai dish by the then Thai Prime Minister Phibunsongkhram to solve hunger and nutrition issues in the country in 1930s. Pad Thai uses Chinese noodles, dried shrimp, tofu, bean sprouts, which are all traditional Southern Chinese ingredients. The only Thai element in the dish is the peanut sauce.
This is the most difficult noodle dish to master because in the final step, the noodle needs to be moisture and cannot be dry or soupy. But over 90% of people will fall into the last two wrong categories.
To Chynah dahl- Hi Chynah! Don't be scared! Just understand that you must go shopping for all of those ingredients and then you must commit to eating Pad Thai every day of the year thereafter so you don't waste all of those great ingredients. It is great fun! Especially if you are fortunate enough to live within a day's drive of an Asian Market. My family requires that I trek all the way to New York City in search of tamarind paste and garlic chives (not the same as scallions!) and salted turnip and baked tofu and dried shrimp. Even the garlic tastes better when I buy it from an Asian Market. So go for it! Happy Thanksgiving and happy Asian Market shopping! Don't forget the peanuts!

My Wife used to travel a lot, She's been to Thailand, India, Peru, God knows where else, she loves Thai food and got me into it, this is what I had, also liked the seafood soup that the restaurant makes.
So I went out and bought all the kitchenware I would need to follow your recipes. Started out with the Mongolian beef then on to general toes chicken. Your confidence amazes me. I wil l have made pad thai before and made the clumsy mistake of boiling the noodles. It makes the dish all the drier. I will use your technique and tip on the garlic mincing. I just made this dish. I subbed the sugar for honey. I also used chives since thats all i had and used carrots and jalapenos and cilantro to give the added touch. A restaurant near me uses these ingredients. It came out really good. I used sesame oil and cumin to resemble the tamarind flavor. Next time Ill boil tamarind to make a paste.
Where do you live? I'm finding these type of stores popping up more and more. Some small town rural area may not have it, but some cities may especially neighboring a larger city.
I've been trying to cook a good pad Thai for ages but his sauce is the simplest and best so far. I also add diced shallot as the base when cooking and julienned carrots and cilantro as a finish. 1Year edit: anyone trying to make Pad Thai, the noodles will always get you. They just got me now. I used the dry rice noodles soaked in water for an hour, pliable but not squiggly line soft so they ended up being a little chewy when done. I should of used the soft white ones in the "fresh" bag but I learned the hard way.

Sriracha sauce? Well, I guess it’s your own version. Traditional? Tamarind sauce + palm sugar + fish sauce = Pad Thai Sauce

@@MariaV0071 look up pailin kitchen she has some options for veggie versions. I think in one dish she used fermented soybeans and still used tamarind.
I need to stop being scared and try this dish. He makes it look so easy. Jet is definitely one of my new favorites.
This is the most difficult noodle dish to master because in the final step, the noodle needs to be moisture and cannot be dry or soupy. But over 90% of people will fall into the last two wrong categories.
To Chynah dahl- Hi Chynah! Don't be scared! Just understand that you must go shopping for all of those ingredients and then you must commit to eating Pad Thai every day of the year thereafter so you don't waste all of those great ingredients. It is great fun! Especially if you are fortunate enough to live within a day's drive of an Asian Market. My family requires that I trek all the way to New York City in search of tamarind paste and garlic chives (not the same as scallions!) and salted turnip and baked tofu and dried shrimp. Even the garlic tastes better when I buy it from an Asian Market. So go for it! Happy Thanksgiving and happy Asian Market shopping! Don't forget the peanuts!

Love this! I have his cookbook and have used it frequently and now have a fully stocked pantry to whip out a stir fry in no time. Gonna try Pad Thai now. No tofu or shrimp for me though. Like the chicken only. 👍🥰 Husband loves Thai Basil Fried Rice.

My Wife used to travel a lot, She's been to Thailand, India, Peru, God knows where else, she loves Thai food and got me into it, this is what I had, also liked the seafood soup that the restaurant makes.
So I went out and bought all the kitchenware I would need to follow your recipes. Started out with the Mongolian beef then on to general toes chicken. Everyone loved the food and today it’s going to be pad Thai. Thanks for the videos they are very informative they have awaken a new way and flavor to enjoy here at home.
I’m so glad I saw this, my first attempt of pad Thai noodles were over cooked, second attempt to dry because I took them out at exactly 3 minutes and this third time I’m hoping for success. Determined to make it perfect!

Your confidence amazes me. I wil l have made pad thai before and made the clumsy mistake of boiling the noodles. It makes the dish all the drier. I will use your technique and tip on the garlic mincing.
I just made this dish. I subbed the sugar for honey. I also used chives since thats all i had and used carrots and jalapenos and cilantro to give the added touch. A restaurant near me uses these ingredients. It came out really good. I used sesame oil and cumin to resemble the tamarind flavor. Next time Ill boil tamarind to make a paste.

Where do you live? I'm finding these type of stores popping up more and more. Some small town rural area may not have it, but some cities may especially neighboring a larger city.

I've been trying to cook a good pad Thai for ages but his sauce is the simplest and best so far. I also add diced shallot as the base when cooking and julienned carrots and cilantro as a finish.
1Year edit: anyone trying to make Pad Thai, the noodles will always get you. They just got me now. I used the dry rice noodles soaked in water for an hour, pliable but not squiggly line soft so they ended up being a little chewy when done.
I should of used the soft white ones in the "fresh" bag but I learned the hard way.
I have been through like 15 pad thai videos, I wish this was the first I saw, would have saved me lot of time!

Jet, Thank you for sharing your recipe! I appreciated the tips on using baked tofu and tamarind paste. Ended up using a full rice stick & doubling the sauce recipe and-everything came out perfect! No need to try any other pad Thai recipe recipe again.
