The angle with the degree (3x+10) is supplementary to (x-30) because vertical angles are the same. Then you add it up and separate the variables and numbers. You'll get 4x = 200. Divide that by 4 and you get x = 50. :D
Since the angle relationship in the diagram is complementary we know that both those angles added up will equal to 90. Write the equation then solve for x, ones you’ve solved for x substitute

I assume you are talking about the diagram at 4:17. In this diagram, angles d and h are corresponding angles that are therefore congruent. There is no direct relationship that we've named between angles d and g, so we have to go through a couple of steps to conclude that d and g are angles that add up to 180 degrees.
