Bought a sous vide about a month ago after watching this channel. I've made steaks twice, first time they were delicious, second time not so much. Made chicken in one way or another 3 times, came out perfect every time. I have to perfect my searing method, so far I haven't had much luck with a torch, a cast iron pan has worked much better. Great videos. Ill be watching for the next one.
Great video! I haven't had duck in years, this looks like something I will tackle soon! Thanks again JB! Side note: we have these huge ducks walking around my neighborhood and I tell them all the time that they are very lucky that there are ducks for sale at the supermarket! LOL

Ever throw the fries into the duck fat for a minute or two while the duck tests?
I wanted to do that here but the rest of my duck fat was destined for a different use
Try curing your fries in a vinegar solution. It makes a better fried potato.
