⬇️⬇️English recipe follows⬇️⬇️ 醬爆飛排 材料: 急凍豬飛排2磅 蒜蓉1湯匙 處理: 1. 排骨,清水解凍。 2. 排骨解凍後,倒去水分,加入粗鹽1茶匙,乸5-10分鐘,去除雪味、腥味,及加入少許鹹味,清水沖洗乾淨。 烹調: 1. 預備一鑊水。 2. 在鑊內加入粗鹽半湯匙及紹興酒2湯匙,大火滾起。 3. 加入排骨滾至起泡,清水沖洗乾淨,擎乾水。 4. 白鑊,加入蒜蓉,大火燒熱。 5. 排骨,放鑊內,轉慢火。 6. 加入調味料: a. 豆瓣醬1湯匙半 b. 蠔油1湯匙 c. 生抽半湯匙 d. 陳醋1湯匙(可以不用) e. 冰糖2粒 轉大火,炒勻,加入大滾水,蓋過材料面1吋半,冚蓋,大火滾起,轉中慢火,炆20分鐘。 7. 加入老抽1湯匙,攪勻,轉大火滾起,冚蓋,熄火,焗10分鐘或以上。 8. 排骨已焗了10分鐘,大火滾起,炒勻至收汁。 9. 完成,上碟,醬汁淋上面。 10. 灑上芫荽及辣椒碎。 11. 可享用。 Braised pork ribs with chili bean sauce Ingredients: Frozen pork ribs 2 lbs Garlic sauce 1 tbsp Preparation: 1. Rinse thoroughly. Steps: 1. Prepare a wok of water. 2. Add in 0.5 tbsp of cooking salt and 2 tbsp of Shaoxing wine, heat up at high flame. 3. Add in pork and boil up until bubbles arising up. Rinse thoroughly. Drain. 4. Plain wok, add in garlic sauce. Heat up at high flame. 5. Pork, put in the wok. Turn to low flame. 6. Add seasoning: a. Chili bean sauce 1.5 tbsp b. Oyster sauce 1 tbsp c. Light soya sauce 0.5 tbsp d. Mature vinegar 1 tbsp (optional) e. Rock sugar 2 cubes Turn to high flame. Fry well. Add in boiled-up water just covering up the ingredients for 1.5 inches. Cover up the wok. Heat up at high flame. Turn to medium-low flame. Braise for 20 minutes. 7. Add in 1 tbsp of dark soya sauce, mix well. Heat up at high flame. Cover up the wok. Turn off fire. Leave it for 10 minutes or more. 8. Pork ribs have been left behind for 10 minutes, heat up at high flame. Fry well until the sauce becomes thick. 9. Complete. Put on plate. Pour sauce on top. 10. 材料:
