Good Old Fashioned Malt Loaf...

  • Here is another classic tea loaf. This one is beautifully soft and sticky and is gorgeous with plenty of Kerrigold butter slathered over the top.
    It used to be one of our lunchtime treats as children just before we were sent back off to school for the afternoon session.
    I have made this from the original recipe which takes an overnight soak for the dried fruit but just look at the ingredients for the liquor, can you imagine the fab flavours the fruit will be lapping up! Well worth the wait I believe …and if you can wait for 2 days for the loaf to mature, then you will find the perfect Malt Loaf with that wonderfully sticky consistency…

    Ingredients:
    120g sultanas
    90g chopped dried prunes
    90g chopped dried figs
    180ml freshly brewed strong tea (I used 3 PG Tips tea bags)
    100g soft dark brown sugar
    100g malt extract (plus more to glaze the loaf with when cooked)
    50g treacle
    260g plain flour
    1 tsp baking powder
    1 tsp bicarbonate of soda
    2 eggs
    Method:
    The day before baking:
    1) In a medium bowl, pop 120g sultanas, 90g chopped dried figs and 90g chopped dried prunes.
    2) Pour in 180ml freshly brewed strong tea (I used 3 PG Tips tea bags,) 100g dark soft dark brown sugar, 100g malt extract and 50g treacle.
    3) Cover with cling film and pop into the fridge overnight
    The next day:
    4) Preheat oven Gas 4/ 180’C or 350’F
    5) Line a 2LB loaf tin with baking paper
    6) Pop the fruit and all of the juices into a large mixing bowl and add 260g plain flour, 1 tsp baking powder and 1 tsp bicarbonate of soda. Stir well to combine
    7) Add 2 eggs and mix until well incorporated
    8) Pop into the loaf tin, level the top and bake for 1 hour. Remove from the oven
    9) While still warm, brush the top generously with more malt extract
    10) Leave in the tin to cool completely then remove from the tin but leave the baking paper on and wrap well in tinfoil.
    11) Leave to mature for 2 day then slice thickly and add plenty of butter to serve with a hot cup of tea
    12) Malt loaf keeps well wrapped in baking paper and foil in an air-tight tin for 7-8 days at room temperature. If you want to keep it longer, it can be frozen

    I have been wanting to make malt loaf for ages , but couldn’t find the malt extract in the supermarket ! Thanks for pointing out they sell it in Holland and Barrett. I’m popping there immediately to buy some 😋

      @@MargaretsMakeandBake I put the mixture in 2x 1LB tins and gave one to a friend . We both agreed it was even more delicious on the third day , I’m making two more for my pensioner friends next 😊

    Wow thank you for this recipe, i always had this as a child and my mums name was doreen. There is a brand of malt loaf she always purchased (soreen) and i always used to say "where's the soreen doreen" lovely memories of a wonderful mum.     I don't think I've ever seen malt extract before, is it made from malted barley? I bet the combination with the tea-soaked fruit makes for a delightful caramel flavor. The process of letting it sit for a few days reminds me of making American fruit cake or German stollen.

      Yes, it is made from malted barley, it's also used in the brewing of some beers. I had forgotten you also soak fruit for stollen. Its been so long since I made it, it's my sons favourite! Thanks for stopping by 👍

    Made your bara brith. Great recipe. Have made it a few times now. I'm trying the malt loaf recipe today. Just to say you can also buy malt extract from Grape Tree shops if there is one near you

    I just baked my first malt loaf per your recipe, having eaten commercial malt loaves through my life. Here in Canada I had trouble getting the malt extract but found it locally at a wine and beer home brew store. First off, I was surprised how simple actually making the loaf is. It is baking as I write and I will post the verdict in a few days after it matures. Secondly, your posted recipe omits smearing on malt extract after it comes out of the oven. You may wish to amend that as, in your word, it "needs" doing to add the required flavour. More to come but, in the meantime, I look forward to tasting it.

      @@MargaretsMakeandBake One last question I meant to ask. In storing the bread for several days for "the magic" to happen, should that be at room temperature or refrigerated?

      @Buddyboy4x44 Malt loaf keeps well, wrapped with baking paper and foil in the tin at room temperature for about 7 or 8 days. If you want to keep it longer, it can be frozen. I don't keep mine in the fridge as it changes texture, loosing it's lovely stickiness...

    Does anyone remember Harvo malt loaf? It was at a time before soreen. I live in New Zealand now (for the last 50 years) and malt can be purchased at most supermarkets . Sometimes in the health section.

      Yes, i remember Harvo, it was fairly local to me in Dudley as it was made in Birmingham, better than Soreen, i think there are one or two substitute recipes about on the web.

      Yes, I had my mum's old recipe but it wasn't sticky enough for me so prunes, dates and treacle joined the party...🥳

    Here in Nova Scotia, Canada, I had trouble sourcing the necessary malt extract. In the end I found it available in a local homebrew wine and beer making store. Malt extract is one of the ingredients they use in the process. Perhaps that might help others looking for a source in their own locales.

    I love the look of this malt loaf, I can almost feel the stickiness. You can get Malt Extract from any homebrew shop , made in different styles as well. I watched the loaf tin lining about 4 times before I got it lol....some things boys will always struggle with. I can't wait to try this with the figs and prunes....it will be so yummy and rich.

    It’s a great recipe. I divided the mixture into two x 1 pound loaf tins which I bought especially for this recipe. A large loaf is too much cos I tend to be the only one eating it. I couldn’t get the malt so I made a bulk order of malt extract and molasses. I ordered on line from Holland and Barret (UK)

    The whole point of using baking paper is so you don't have to grease the tin! It's an ALTERNATIVE to greasing the tin.

    Does it have to be plain flour with bicarb and baking soda or can i use self raising flour?

      I haven't tried it with self-raising flour, but it is such a sticky batter that it might not make too much difference. Do let me know if you try it...😀

    I've had a few goes at making malt loaf, including this recipe. Every time though I have the same issue. I take it out of the oven and it looks fine. I drizzled it with the malt and wrapped as instructed but, within a pretty short time, the middle collapses. It tastes fine but it's sticky inside and almost seems unbaked. Any idea what I might be doing wrong?

      Hmmm, I'm wondering if the oven temperature may have been a bit low or perhaps the loaf came out of the oven too soon. It can however dip a bit as it cools and it is supposed to be a nicely sticky loaf...

      @@MargaretsMakeandBakeI think you might be right. I put a thermometer in my oven and it was nowhere near the temperature that I had set it to. I made some scones to test it and they came out fine, so I'll have another go at the malt loaf soon. Thanks for the reply.
