Seems to be very Americanized traditions. I've never heard of anyone using extract for the christmas food. Not much on this table is traditional for the christmas table in Sweden. Hundreds of years ago we probably ate porridge and peasoup on our julbord. A few might still eat lutfisk and red cabbage. Sill (pickled herring) is also getting pushed out by some modern families. Traditional Swedish christmas table (nowadays) may vary but often includes christmas ham, prince sausage, bolied potato, beetroot, sill, swedish meatballs, ribs, sourcream, horsemeat, cheese, eggs, Janssons temptation, julmust, coca cola, christmas sausage (pork sausage), brown sauce, horse radish, julknäcke (hard bread), soft and hard thinbread, pepperoni sausage and more. We do not diet on christmas eve in Sweden.
We milked cows so we raised our children on flødegrød or rommegrød, eating it at least once a week. Half of the kids no longer can stand the stuff and the other three still love it. Man laver ikke rødkål med fløde? My grandmother served absolutely every vegetable with cream. Heaven forbid you'd have any color with your meal, everything should have that white color, don't you know. I was raised in a Danish community, where the common saying was: Der er to mennesker i verden, dansker og dem, der ønske, de var dansker.
