Honestly Suneaters quirk is amazingly flexible and cool. And as seen he can even eat stuff like crystals and use that. Sure his quirk might not be the strongest in a straight up fight depending on his enemy but as a hero who often doesn't know what he is going to be up against it is so valuable in the hands of somebody who can adapt quickly under pressure. Only downside that if you find the best things to eat your daily meals are going to be boring af since you always want the best combinations available.

I love Amajiki because we are so similar, I've always naturally been a quiet person and we moved so much when I was younger that I stopped counting. It got to a point where I talked to people even less because I knew we were just going to move again. The only school I actually got to go to entirely without moving during it was high school. To say I have issues connecting with others is an understatement. I already liked Amajiki before this episode but I wanted to hug him when I saw his back story in this one

A very cool detail that not a lot of people pick up on is that Mirio says his uniform is made with a fiber of his own hair so it would become permeable like he is, and in the flashbacks we see mirio with longer hair, meaning he was growing his hair to make his uniform

If Suneater can copy crystallize by eating a crystal, what would happen if he ate one of Deku or Mirio' hairs. Definitely some untapped potential there yet.

I see where you're going, but he ate the crystal to produce said crystal. We don't know if quirks count as natural features of the body for Manifest logic if he were to eat that guy's hair instead of his crystal. And all of Deku's power is best described as accumulated will/energy so he has nothing to offer.
Since he can likely make ink when transformed into an octopus, there is good theory for him to copy Mirio's. But he would need to practice the sensation when using it, just like a 4 year old discovering their quirk, and devoting his training to someone else's quirk is very counterintuitive when he can digest any food at all and not worry about an exponential learning curve. Not to mention he needs to be digesting a substance to use it, so he'd constantly need a pouch of hairs if he plans to work with it at all.
Worst case scenario, mutating his body with someone else's will likely give him cancer.
