In my own less scintific experiments, the field dressing of the critter, the temperature at the time you shot it, the trip to the butckher or to the garage, all mattered more than the cooking. After you get the game down, you have to do your part. I remember as a kid the "heros" parked in front of the local pub with the moose in the back of the truck as they celebrated. I bet you couldn't resole your boots with the steaks off those moose, the nails wouldn't go thru. Respect. Respect. this vid shows that. it is about the wild game on the table.
I've eaten Moose, Mule Deer, Whitetail and Black Bear all my life. I believe the one thing that makes a difference in how the meat tastes is what the animals have eaten and what they were eating when harvested. I've had them taste strong and almost unpalatable and I've had them taste so juicy and sweet it makes your mouth water just thinking about it. All I know for sure is meat is soooo good! A true wonder food!
Love these blind taste tests! Yes, do some winged game. And wow, Randy actually did pretty good considering the only two he missed were basically the same (whitetail vs mule deer). Had you only had one of those and then had bear, bison, or something else, he likely would have aced it.

Loved the video. I just had Mule Deer for the 1st time and was not able to tell it apart from the whitetail I eat almost daily or the axis, sika, pronghorn, elk, moose, aoudad, and dahl's sheep I've had. When cared for properly, they have all reached the same level of excellence for me.
Randy did pretty good being that he only mixed up the whitetail and the muley. Those two can taste nearly identical if they’re from the same area, feeding on the same things.
What fun. I never have that many different species in the freezer at one time, but that looks like such a fun experience to share with friends and family. Good for you guys to set it up and keep it up. Even if it is just for the enjoyment of each other.
I've killed mule deer, blacktail, whitetail, pronghorn, elk, black bear, axis deer moose and even a nilgai. I would say elk and pronghorn are tough to beat out of the natives, and axis deer from Hawaii would be the top exotic. Also, I agree with everything everyone has said about quick kills, quickly getting the hide off, and quickly getting rhe meat cool and dry.
I love this, great idea. Maybe have everybody rank them as favorites too! There’s lots of wives in my friend/hunting group that don’t like deer but eat elk, then we do something like this and they choose blacktail as their favorite 😂
This is awesome. You guys should open this up to the whole town or country. Do a charity thing $50 a table, whatever the number! Film it. It would be exciting. I would definitely show up haha. Keep up the good work guys.

I’ve shot bear, deer, caribou, and moose. Moose was definitely the best, bear the worst. Caribou, about similar to deer. Bear was something completely different.
Great idea and so much fun! You need a palate cleanser between courses or tastings! Maybe a sherbet or sorbet? If I had this much wild game to serve for dinner I'd prefer a nice red wine from either Napa Valley or Bordeaux!

@Fresh_Tracks thank you for replying. I live in Southern AZ and eat northern AZ elk, Coues deer, and javelina. By appearance and texture, the moose and the pronghorn looked best to me. Great video, keep up the cooking videos.
We did include a "best tasting" section on our scorecards but we found it hard to articulate in the video so that section, as they say, "hit the cutting room floor". I always have heard elk was the best but never have tried it ! I used to get buffalo steak at a place in Cherokee Oklahoma it was good but sometimes would put up a little fight.
It seems that whatever wild game meat you don’t have always tastes better than what you do have access to. I like them all, even livery duck and goose. So far, I haven’t figured out how to prepare desert sage grouse and enjoy it as it tasted super sage!
Interesting! The main difference, I would think, would be the difference in texture. Antelope has such a fine, delicate texture and mature moose and a mature bull elk have a much more coarse texture. I haven’t eaten much white tail, so I’m not sure how that would be different from mule deer. But I’m surprised the tastes were so similar.
This would be great for winged game too. I think it would be a lot easier but fun too. Pheasant, sharpie, blue, dove, duck and throw some chicken and turkey in aswell

When people talk about a game animal tasting crap, it usually is because of bad meat care after the shot. Or a poor shot, like a gut shot, resulting in a long tracking job after a wounded animal. The age of the animal can also influence much of the taste and often can a young animal of one specie taste the same or at least VERY similar to an adult animal of another specie. For some animals it also depend a lot on what time of the year you kill them and what food they have been eating the last month or two before you killed it. There can also be a huge difference in taste if you age the meat or not and if you wet or dry age the meat, and also for how long you age the meat. Some meat must not be cooked more than medium rare to taste great, while some meat can be cooked to medium and still taste great. All this can have a HUGE influence on how the meat will taste on your dinner plate.
I would like to see a blind taste test for best taste alone. I know that was on your scorecard, but maybe if they don't have to pick the species, just taste alone how would that turn out. For this tasting what was the best to worst tasting?
Use a “fattier” cut of meat (I don’t know what cut bc it is all so lean). The fat is what contains most of the flavor so it should be easier to distinguish them based off of the differences in forage.
Throw some grass fed beef in there and have people rank which meat the thought tasted the best. See if there is an agreement on which meat taste the best through worst.

Backstrap is one of the mildest cuts. Maybe repeat the test with a tri-tip or somewhere around there instead?
Tri tip on the white tail and antelope are going to be so small. Maybe the round tip would be a better cut

Cool test. I think you should have them guess what it is, but also have the contestants rate it for flavor.

You need to do a MUSCLE MEAT like a hind quarter STEAKS, back straps best cut most tender USUALLY THE MILDEST CUT TOO!! IMHO GOOD JOB VERY FAIR!!

Good idea but to be the same you could have used same sized pieces. That way they cook the same based of time and temp.
