Do you soak your split peas before hand? I do, but somehow my peas never "melts". I always have to blend it afterwards which affects its consistency, so it's never like the traditional split peas soup that I grew up with. Why do you suppose that is?

The same. You'd just need to season the pigtails first or add the seasonings during the cooking process with a bit more salt.
I'll share a video soon on how to make salted pigtails. fresh will never give you that rich deep flavor
