    "Childhood nightmares"! LOL! That is so funny because I also hated anything cooked like this as a kid. But now, I love it! Yours looks amazing and so similar to the way we make it in Colombia.

    Wow, this looks amazing! I think I'll make this for my mother-in-law over the holidays. She cooks us food similar to this and she would get enjoy the Cuban vibe. She's Colombian and has her own variation of this dish. Great recipe as usual!

    I grew up eating this dish made by my grandma in Cuba and mom in Miami, will make this soon, I love it. Cuban girl sending salutations from Alaska.

    A very nice cook Julie. as we get older our taste buds change,so I would take this over your childhood pop tarts and lunchables any day,except when I was a kid too.I bbq low and slow as well,it just captures all the flavors making food taste better .this is a must do.thanks for sharing..

    I'm Dominican and I also use sour orange my mom taught me that. I love it !!! Just never thought to make it with fresh orange and lime thanks. Looks delicious !!

    I've had Cuban dishes made with pork but not many with chicken this dish looks delicious can't wait to try it.

    It looks grand!! I make chicken fricasse Hungarian style only using paprika and salt and pepper and cream. Finished it has a pink color and served over egg noodles.

    Used to get this dish at a Cuban restaurant in Maywood, CA. Since moving to the FL Panhandle with no Cuban eating places in sight, I decided to try making this dish myself recently. It came very well and enjoyed it completely, minus the olives which I left out.

    Lovely voice n recipe ! Of all the fricassee I've seen, I find yours has attracted me to try it. Since I've got chicken already on hand, I'm definitely gonna make this for my family's dinner tonight ! just like to add a bit of fresh ginger n tempe (made of soybean) to make it a more flavorful African Indonesian dish. Thanks for sharing !

    You're right it is different from my Cajun-French dish. Still looks great. I do similar creole dishes this way tho.

    Never underestimate the power of the foods you were forced to eat as a kid lol. I've been on kind of a crusade the last couple years to try and recreate some of my grandmother's cooking. (german woman, never wrote down anything.) It never seems to be just right, but your tongue always tells you when you're close. I've come close to quite a few of her recipes, but unfortunately I dont think I'll ever be able to nail her sauerkraut. Oh well, all you can do is keep trying right?
    Anyway, great recipe, thanks for sharing!

    I've heard of this dish before, but never had the opportunity to try it. It looks great though, so I'm definitely going to make this the next time I cook chicken. I always like to try classic dishes, especially when I've never eaten it. lol :)

      You can nonalcoholic wine instead. It's not exactly the same, but it works.

    I fricken love cuban cuisine.....but I like it not as salty as some restaurants prepare them.....
    btw can you make some "how to" videos like showing how to press garlic, dice onions or opinions on kitchen tools....just a suggestion :)

    Im Cuban American and would like to do this fricassee but with duck instead of chicken since I hunt ducks during the hunting season. You think the flavor will be similar? Your voice is soothing. Hope my fricassee taste as soothing as your voice. JeJe.

      I just remove any excess fat and pat dry it with paper towel. All bacteria gets killed while the chicken cooks.
