Potatoes are easy to grow, often with minimal effort and they can grow in small spaces in your garden beds or in a container. If you have a sunny location, then you can grow potatoes. In fact, I planted a seed potato right in the corner of an already packed raised bed. I like to utilize every square inch of my garden space, and plant something to maximize food production. An old potato from your kitchen is easy to regrow and should not go to waste. This is a great crop to harvest in the late winter and early spring.
