We had this for dinner last night. We call it "tortang talong" ('Talong' means eggplant) What I do is mix in minced garlic and onion with the egg and the roasted eggplant. It 's good, especially if you partnered it with some good o'l banana catsup❤

I don't know if you know this version: Grilled Eggplants, peel all the skin, of course. Then must be finely chopped/mashed and then add some read onion (finely cut), salt and an egg yolk..add sunflower oil to combine all that and becoming creamy and a slightly mayonnaise from that egg yolk. Or without the egg yolk, it's tasty as well. On a loaf of bread, normal or toasted, it's so yummy. 😋 😋 Next to some ham, tomatoes. Like 2 cm of that so called "Eggplant salad" on a loaf of bread..heavenly.😋

1 of my faves but I do it with sautéed pork mince, onions, tomatoes, garlic and replace salt with a bit of dish sauce & Maggi sauce. I also take out 3/4 of the pork mince once browned and leave the other quarter to really caramelise and crisp it then mix it back together with other mince so you have different textures of juicy mince and crispy gnarly bits. If you don’t have a bbq you can use your grill, air fryer or oven but I sometimes just use the open flame of my gas stove as it gives a nice smoky char taste to the eggplant that you just don’t achieve without some kind of flame. I just love Tortang Talong )eggplant omelette but Tortang Talong Giniling (mince) is next level. I only found your channel 3 days ago and am so surprised and happy u have so many filo dishes. But filos LOVE food so it’s a brilliant way to get subscribers…there’s so many of us 😂 Great job mate, salamat. ❤ from a a filo in australia
@@peteroz7332 yeah it's pretty common in the philippines for people to eat rice, some type of protein and/or vegetable, and a dipping sauce. The dipping sauce could be vinegar, soy sauce and calamansi (a type of citrus fruit), and banana ketchup. (we also have tomato ketchup but oh well)

there’s a local canteen nearby my house that used to sell very crispy eggplant omelette. it was so tasty, the best eggplant omelette ive ever tasted. i still pass by that canteen from time to time to see if they would sell it again. unfortunately they haven’t been for a while now. ive always wondered if they added cornstarch to make it crispy. ive yet to try it myself

My Pinoy bf introduced me to this dish and I loved eating his eggplant more because of that
