The sword mechanic seems the easiest. Why not just choose sword each time we have to choose a weapon? Does the raid get a debuff if you pick the same thing more than once or does the weapon go away?

Can only do each weapon once. On normal the respawn after you've completed them all , on heroic that's your enrage though.

I still don't know what to do as the tank with the axe. As tanks we should stay together the whole fight, so do we soak 2 times?

Only 1 tank in each soak.
