Spicy Garlic Butter Chicken Recipe

    Today I'm making an easy spicy garlic chicken recipe. This one pot chicken breast recipe is perfect for weeknight as well as a meal prep option. You can also switch the chicken breast for chicken thighs or any other part. Give this easy chicken breast recipe a shot and it's surely going to turn into your favourite quick dinner recipe!
    _______________________________________
    INGREDIENTS: (2 servings)
    1 lb/450g chicken breast
    2 tbsp olive oil or cooking oil
    2 tbsp butter
    2 tbsp minced garlic
    1 tsp red chilli flakes
    1 tsp dried oregano
    1 tbsp red chilli sauce
    1 tsp sugar
    1 tsp lemon juice
    1/2 cup chicken stock
    Parsley (or preferred herb) for garnish
    Marinade:
    1/2 tsp salt
    1 tsp fennel seeds
    1 tsp dried herbs
    1/2 tsp chilli powder
    METHOD:
    1. Cut chicken breasts into bite sized pieces and coat with the marinade ingredients. Set aside for at least 15 mins
    2. Add olive oil or cooking oil to a pan on medium heat. Add the marinated chicken pieces and fry on all sides until cooked through. Be careful to not overcrowd the pan as it can release too much water and steam the chicken
    3. Once the chicken is well seared and cooked through, set it aside
    4. Reduce flame to low and add 2 tbsp butter
    5. Add 2 tbsp minced garlic and sauté for 30 seconds
    6. Add 1 tsp red chilli flakes and sauté for 30 seconds
    7. Mix in 1/2 cup chicken stock to deglaze the pan. You can also use 1/2 tsp chicken stock cube or bouillon powder mixed with 1/2 cup water
    8. Add 1 tsp dried oregano, 1 tbsp chilli sauce and 1 tsp sugar and mix well. Let the sauce simmer until it reduces and thickens
    9. Add 1 tsp lemon juice and salt if needed. The stock and chicken are already salted so add only after tasting
    10. Add the fried chicken and toss until all the pieces are well coated
    11. if you want more sauce, add cornstarch slurry (1 tsp cornstarch+1/4 cup water) and simmer until it thickens
    12. Garnish with fresh parsley and serve with rice/quinoa/bread and veggies of your choice

    SUBSTITUTES:
    • No chicken broth?
    Use 1/2 tsp chicken stock cube or bouillon powder with 1/2 cup water
    • No oregano?
    Use thyme, tarragon or Italian seasoning
    • No lemon juice?
    Lime juice or apple cider vinegar works too

    TIPS:
    • Use unsalted butter as chicken stock or stock cube have added salt
    • Don't overcrowd the pan while frying the chicken or it won't brown properly

    You list in the marinade “chilli” powder, which translates in the U.S. as taco powder. Do you mean, spicy “cayenne pepper”? Also, what “dried herbs” do you mean? Also, what do you mean by “chilli sauce”? Is that “hot sauce”?

    Ok, when it starts becoming more about producing a video than demonstrating a good recipe I lose interest real quick as my anecdotal experience is that they are almost always mediocre recipes at best. I don’t need to see all the prep work and slow motion stirring chicken. Learn to use a mise en place! It keeps your production moving along without all the tedious work of cooking we all already know how to do.
