Good video man. I have so many wetstones and gadgets to sharpen knives, and somehow still always make them blunter. I will try going much slower and see if that helps.
Yeah if your hands are rocking as you make your stroke you effectively bend your delicate edge as you sharpen, ask me how I know:). keep at it.
