Amaretto peppercorn sauce recipe - perfect on steak

- I love a decent peppercorn sauce! This easy version deviates from tradition using Amaretto which gives it a little more sweetness against the heat of the black pepper and that slight nutty flavour of almonds - a favourite of mine!
In brief; cook your steak of choice (I went with a t-bone for this one), remove from the pan and while resting deglaze the pan with a (generous!) splash of amaretto. Let it cook out for a minute then top with a couple cups (about 500ml) of beef stock, in with a tbsp cracked black pepper and reduce by half on a high heat. Then reduce heat to low, pour in about half cup double cream add little knob of butter and swirl the pan while on a very gentle simmer. Finally pour in any leftover juices from the resting steak. This serves about four persons. If it’s too sweet you can add a few drops (literally a few drops) of lemon juice, but I don’t bother.
Serve over your steak, steamed veg and good chips!
