Yes, you can define the exchange rates for tokens yourself. This is done in the code of the smart contract itself. (But I can't help you with specific code examples)

When you swap ETH for a token and that token's value increases, how do you sell the token to realize the increase in value? Swapping it back to ETH does not realize the gain. Any help?
