Grammy's Casareep Chicken || Using Hard Fowl- Episode 165

  • Ingredients and Measurements:
    3 lb chopped chicken (fresh fowl)
    8 cloves garlic
    2 hot peppers (optional)
    1 tsp. dried cilantro
    1 tsp. ginger powder
    2 tsp. Adobo (or all purpose seasoning)
    1 tsp. black pepper
    1 onion sliced
    3 scallions chopped
    1 tbsp. tomato paste
    1 tbsp. masala
    1/4 cup casareep (or more depending on color you prefer)
    Salt and pepper to taste
    Oil
    Water

    Matthew you see what your grandmother did was golden. She let the chicken loses its own juices that is to me is the rankness. Then she did her magic. Proud of you guys especially, because we are all from West Coast Demerara. Guyana. Another excellent job. Keep up the good job.

    I did a mail order for the Guyanese Cassava Cassareep. Will surely try this with chicken. Looks great! Yummy! Good job Granny!

      Matthew i just literally finished cooking this for lunch/dinner. I would have never thought of adding masala but this dish is fantastic ty so much for sharing. Wish I can upload a pic.

    I definitely want to try this recipe! What brand of casareep does grammy reccomend? I live in Richmond Hill Queens too so I want to know which brand is best . Im trini and had a guyanese friend make casareep chicken years ago and will never forget how good it was! Thanks for the recipe

      Definitely give it a try it's so good. It is fresh chicken from the farm it is just what some guyanese people call it.

    Delicious!! I do have a question, is this like the Trinidad stewed chicken? If not, how does it differ

      No it is not. Trini stew chicken is made with burnt sugar. Guyanese stew is tomato based. The casareep in this dish makes it casareep chicken, which isn't called stew.

      We use homemade casareep from Guyana. If you can't get that then Bedessee brand is one I like as well.
