  • Ingredients:
    For the Falafel balls:
    2 ½ cups pf chick peas
    5 garlic cloves
    1 medium onion
    1/3 cup of cilantro
    2 tablespoons ground coriander
    1 tablespoon ground cumin
    half cup all-purpose flour
    2 tablespoons of baking powder
    1 teaspoon baking soda
    Vegetable oil for frying
    Salt.
    For the tahini sauce:
    1 cup of tahini paste
    1 cup of water
    1/3 cup of fresh lemon juice
    5 minced garlic cloves.
    Adjust the seasonings to your liking.
    Toppings:
    tomatoes
    salty pickles
    chopped Italian parsley.
    For the pocket pita bread:
    2 cups warm water
    5 cups all purpose flour
    1 tablespoons yeast
    1 teaspoon sugar
    1 teaspoon salt
    1 teaspoon baking powder
    3 tablespoons vegetable oil.
    Direction:
    1- In a large bowl, combine the chickpeas and generously cover them with water, allowing
    the legumes to soak overnight for optimal tenderness and flavor.
    2- In a bowl Whisk together water, yeast , sugar and set aside for 10 minutes .
    3- In a large bowl combine the yeast mixture , all purpose flour , baking powder , salt , vegetable oil and knead by hand or electric mixer until smooth , cover with a kitchen towel and set aside until doubles in size about 2 hours.
    4- In a food processor, combine chickpeas, cilantro, garlic cloves, onion, cumin, and
    coriander, then blend until smooth; transfer the mixture to a bowl, incorporate all-purpose
    flour, baking powder, and baking soda, and mix by hand until it forms a dough-like
    consistency.
    5- Heat the vegetable oil in a pan, then take a spoonful of the falafel mixture, shape it into a
    ball, and fry each ball for 3 minutes on each side, as falafel tends to float; once fried, drain
    them from the oil and set aside.
    6- Combine Tahini paste, water, salt, minced garlic, and freshly squeezed lemon juice to
    create a creamy, tangy sauce that perfectly complements your falafel.
    7- once the dough doubled in size, preheat the oven at 425 f. portion the dough into small balls,
    Bake for about 10 minutes.
    8- Falafel can be enjoyed in two delightful ways: served on a plate, beautifully arranged
    with crispy falafel balls alongside fresh parsley, sliced tomatoes, and pickles,
    complemented by a small bowl of creamy tahini sauce for dipping, or nestled within warm
    pita bread pockets, overflowing with the same vibrant vegetables and drizzled with the rich
    tahini sauce.
