- I'm often asked what I eat......so here's a typical day of eating chez moi. The video also includes a recipe for a lovely, simple, tasty and filling lunch.....it's a great one for a packed lunch to take to work too.

Ooo I’m going to try making your oat milk….I have rolled oats ( oatmeal cereal form) which I eat daily . What equivalent of oats to water do you use to make a nice milk consistency ?? Do you use the oat milk as a sub for cows milk in recipes or to drink ??? Or only on cereal -?

Haha, cheers lovely. I use one part oats and three parts water. It's no good in hot drinks as it's still a bit grainy and can separate.....but it's perfectly fine for porridge. 😊

Vinaigrette - my Grannie suggested that you think of a smiley face - 2 round eyes (oil) and one mouth (vinegar) - I tend to use those proportions but use olive oil 🫒 and lemon juice 🍋

Bread is my downfall and what I turn to if I feel in need of comfort 🍞 I always plan to eat the way that you do (minus any dairy as I'm vegan) but usually end up scoffing loads of bread too, which makes me feel bloated.
Every day's a new day though and you always inspire me to eat more nutritiously and frugally.
I was a bread addict too but have cut it out completely since Christmas....so far, so good.

When I put my kitchen in I had 2 sets of wide drawers put in because like you I have arthritic knees so not good at getting down into lower cupboards. It’s one of the best decisions I made.

This was great, thank you. Have you decided on whether to try one of those organic veg boxes? I’ve looked at them and I think there’d always be something I might not eat.
I probably will try one.....it seems that a number of them will let you swap out what you don't like. 😊

I have had a weekly veg box for almost 4 years now. I love it. It also pushes me to eat different veg I would not usually try, so I find new favourites and new recipes. A company in Tadcaster is a company my friend just told me about which I am pleased, as it is local to me in North Yorkshire. My friend told me today, she tried a veg box for £20. She went online to Sainsbury's shop and calculated the fost of tye same organic veg, which came to £18. So for doorstep delivery, you cannot go wrong!
I also found “Oddbox” is very good. It’s not necessarily organic, but it’s all about rescuing food that would otherwise be landfill. Always good quality (just small or odd shaped etc) and you can select/exclude as you prefer.
Me too, i swopped from an organic veg box because very little variety and no fruit, odd box does fruit and veg, great selection and more than enough, great value. @@annab3952
Another lovely video Vivi. Unfortunately I have dropped £42.00 per week on my income so I have decided to embrace the challenge... I have meal planned where I can batch cook Bolognaise and liver and onions..... and sorted a shopping list for only the things I need. I'm going to enjy this. Sending love as always xxxxx

How is your sleep improvement going? I hope you are making slow and steady progress x
It had been going quite well until the last couple of nights.....RLS has kept me awake. Grr.
@ well I’m glad ther has been some improvement, is there any treatment for RLS (I had to Google what that meant). From being 50 to 62 I had poor sleep but I do seem to have improved now, I hope the new pattern returns soon!!
If RLS is restless legs, my GP has been able to prescribe something which really helps me!! The difference in my sleep is wonderful 😊
@@WhatVivididnext maybe you know this but just in case. often RLS can be caused by iron deficiency. I was in normal range for iron, but on the low end. had RLS. took iron supplements and it was gone.

you know, I'll bet you could save one dirty pot by putting the colander right on top of the boiling water w/ beans. It's got holes just like the steamer.

Two cooked meals seem over the top.
She’s making enough for 4 lunch meals and 4 dinner meals.

As I stated in the video my lunch and supper will make 4 portions.....and as I showed at the end of the video I had 6 portions of meals to freeze/refrigerate for the coming days. I cook all my food myself....it is healthier and more frugal.
I hate sandwiches I love all the healthy veg soups this lady makes
