  • after the day I had today I am going to call it the fool proof cheesecake. recipe written below. serves 10
    23cm round springform tin with baking paper
    2 x 250g blocks philli cream cheese SOFT lol at room temp
    1 and 1/4 cups sweet biscuit crushed
    80g butter melted
    450g can crushed pineapple in syrup drain well
    300ml thickened cream lightly beaten
    2/3 cup caster sugar
    1/2 cup boiling water
    3 eggs
    1/4 cup boiling water
    1 table spoon geletine
    whipped cream and passionfruit pulp to decorate or whatever you want
    1. take out cream cheese put in large bowl cover set aside for ages before you start anything else.
    2. get out tin put baking paper on and in it
    3. crush 2/3rds of a 250g pack sweet biscuit into a bowl
    melt butter pour in and mix til biscuit is wet
    put in tin spread out then flatten with back of spoon put in fridge
    4. drain pineapple set aside
    5. beat cream lightly cover fridge til needed
    6. put sugar and boiling water into saucepan
    put on stove top on med
    stir until sugar melts then stop stirring
    as soon as it starts to boil set timer 6 mins
    7. beat 3 eggs in large bowl for 4 mins
    8. in a small bowl put boiling water and geletine mix well
    9. take off syrup when 6 mins up
    slowly pour into eggs while beating on low
    10. pour the geletine mix in with strainer if needed
    beat on low for another 4 mins.
    11. beat philly til smooth
    pour egg mixture in and fold in til smooth if lumpy beat for a min til
    smooth.
    add drained pineapple and fold through.
    add lightly beaten cream and fold through.
    12. pour into tin and fridge til set min 4 hours. I rekon it tastes better the
    next day so make night before and decorate when you want to serve.
    13. I used 300ml cream, 1/4 cup icing sugar and 1 tea spoon vanilla extract
    and a tin of passionfruit pulp. prob a little heavy handed on passionfruit
    lol.
    serves 10 store in fridge once you have cut a piece change the plate and hour later once all
    the excess passionfruit has drizzled off. will keep it for a few days longer 💜💜💜💜
