I feel confident to go prune my olive tree, thank you. Not just explained what to do really well but knowing why means you can follow the rule when in the future you're not sure.
Not all, but most varieties of olives root quite easily. One of the most simple ways to root cuttings is as follows: Remove vigorous, pencil diameter shoots and cut them into 8 inch pieces. Remove all of the leaves except the top two. Dip the cuttings in rooting hormone powder and place them into a sterile rooting medium with only the top two leaves sticking out. The rooting medium can be sand, perlite, or even peat moss. Since peat moss and perlite are sterile or nearly so when you buy them - they work best. Moisten the medium. For peat moss wet it thoroughly then wring it out by hand so it is not wet, but moist. Olives root best when the air temperature is in the 50-60 degree range and the roots are about 75 degrees - consequently most commercial nurseries use some type of bottom heating method. Commercial nurseries also have automatic spray systems that apply a mist of water when the leaves get dry, but this is complicated. One way to do it is to put the medium in a plastic tub about 12 inches deep, insert the cuttings and then cover the whole thing with a plastic bag. Keep it on the cool side in a greenhouse (winter time) exposed to some light, but not direct hot sunlight and don't open it. The cuttings should root in about 8-10 weeks - then transplant them into small pots with normal potting mix. Paul Vossen
In addition to the Talea, there is a more profitable method, the plant obtained from Talea, it takes a very long time to be able to produce fruit olives, while with the Margotta, clone of the mother plant, if this produces, the plant obtained is much larger than that obtained from the Cutting, manages to produce olives, in fact it is possible to obtain at the time of separation from the mother plant, branches that exceed one and a half meters and even more, which prick, these put in pots begin to be real autonomous plants, this is the technique with English subtitles: ua-cam.com/video/VJNnHI3ZiT0/v-deo.html
Regarding single or multiple trunks. Either one works. Larger scale producers train their trees to one single trunk with no branches below 1 meter (39") so that they can grab the trunks with a trunk shaker for harvest. Olives can actually be pruned any time of the year. The trees are evergreen so pruning that removes leaves is always stunting. Normally, however, we tell people to prune during bloom - or just prior to bloom - if you have just a few trees that can all be pruned withing about 3 weeks. This is because we recomend only pruning trees that have a lot of flowers (too many flowers). By pruning trees with heavy blooming (lots of flowers), this reduces the amount of fruit set and somewhat alleviates alternate bearing. By not pruning trees with a light bloom (few flowers) it assures the most crop set possible - which still may be very small. Pruning trees with a light bloom - just reduces the amout of fruit to even less than what it could have been. In other words we tend to prune mature olive trees with lots of flowers - every other year - during bloom so you can see how many flowers are there. Paul Vossen
Ok, going against the grain here, but any tree has the natural propensity to produce as many seeds as possible, so instead of using the grandfather method, and always do what are forefathers did, how are we going to increase yeild/oil production by hacking off fruit producing limbs? We now have no dig methods, min till etc for growing food which we know is better for the soil and subsequently yields over traditional ploughing. How do we know pruning increases yields, as it seems so counter intuitive. More branches more olives. No? Any scientific research papers mapping yield to pruning ratio, would be greatly appreciated.
Can you plant a Mission and Manzanilla in the ground and dwarf prune it to 10' and still get olives? Or does it want to put on new growth instead of olives? Someone told me to plant them in the ground in pots which would stunt their growth, and put good drain holes in the pot? Thanks.

I have multiple trunk olive trees that I don't want to prune in vase shape, what is your method?

Depending on the varieties, they might need a different polinator.
I would like to know this too since I have two 7 year old Arbequinas that have never flowered, minimally pruned and are healthy.
