The reason there's so many Thief references is because one of the creative leads at Bethesda worked on the Thief series too. And both series' share mechanics.
The Wyvern fact is a bit of Misinformation. Wyverns are generally a type of dragon and can't breathe fire and have venomous tails. Considering that the dragons in Skyrim can breathe fire and lack the venomous tail, it's still more accurate to call them Dragons.

I know this is an old comment, but yes, not only does Oblivion happen after Morrowind, but Dunmer can live for a much longer period of time than humans. If I remember correctly, Jiub was killed in Kvatch shortly before the player arrives. Neolth clearly did not get killed in combat.

The kids are just marked as essential, meaning unkillable. So nothing was disabled or removed, they're just protected. You don't need mods to make them killable either, just open the console and flag them as non-essential. This can be done to any NPC that is essential as many NPCs are flagged as such to avoid breaking major quests and the like.
