The sungolds are the star here, they’re cooked for less than five minutes, just enough for them to warm and ooze their sweet seasonal goodness. Complimented with sweet shallots, hot chilis and creamy goat cheese, this is the perfect example of an overtly simple dish that ticks all the right boxes. Go for farmer’s market tomatoes if possible, taste them raw at the stand, find the right ones. Again it’s all about the tomatoes.
INGREDIENTS
1/2lb spaghetti
2tbsp olive oil
1 shallot, fine dice
≥1pt sungold cherry tomatoes
1 hot chili, sliced or 1-2tbsp Calabrian chili paste 1.5tbsp goat cheese, like chèvre
Kosher salt
EQUIPMENT
≤4qt pot for boiling pasta ≤12” sauté with a lid tongs
1/4c measure
STEPS
Fill the pot 3/4 of the way with water, set over high heat and bring to the boil.
Once boiling add at least 3tbsp Kosher salt, ideally you’d taste the water and try to get it to the salinity of a soup. Add the pasta and set a timer for 1 minute under the recommended cooking time.
Meanwhile, in the sauté over medium high heat, add the oil, shallots, chili and a good pinch of salt. You should hear the sauté, but it shouldn’t be violent. Cook for 5 minutes or until some of the shallots start to turn golden.
Add the sungolds, piercing each tomato with the tip of your knife, stir well, add 1/4c of the pasta water to the sauté and cover for 2 min.
At this point the pasta should just about be done, taste a strand. It should be almost cooked, but slightly too al dente, this is perfect - add the spaghetti to the sauté and gently simmer the entire mixture for 2-3 min while constantly stirring. Taste the pasta at 1 min intervals and end this process when you’ve reached desired doneness.
Turn off the heat, add the goat cheese and stir until it coats the whole mixture in a homogeneously creamy manner.
Add a pinch more salt if needed. Serve and enjoy.

I would put the Goat cheese in and incorporate it in the sauce before adding the pasta and then finish cooking pasta in the sauce. nice job.

OMG...this looks so good. I've, always wondered about making pasta with some variety of cherry tomatoes. Is there another cheese that would work as well as the goat cheese?

Olives, anchovies, artichokes?
I don't add any spicy ingredients as I don't like them. I add some Spinach or Chopped clams or shrimps or scallops....Is up to your preference.
