How to make 1950's Chocolate Eclairs and Cream Puffs | Dining Through The Decades Episode 6 Finale

    Hello Darlings, this is the last and final episode for the 1st series of the Cooking Show! In this episode I make scrumptious Chocolate Eclairs and Cream Puffs from my 1953 Better Homes and Gardens Cookbook. I hope you enjoy this episode, I had heaps of fun making it!

    Here are the recipes:
    Chocolate Eclairs and Cream Puffs
    - Add 1/4 pound stick of butter (1/2 cup) to 1 cup boiling water. Stir to melt butter. Add 1 cup flour, 1/4 teaspoon salt all at once.
    - Cook, stirring vigorously, until mixture is smooth and forms soft ball that does not seperate.
    - Cool mixture slightly, add 4 eggs, one at a time. Beat vigorously after each egg is added. Beat until mixture is smooth.
    - Drop batter onto greased cooky sheet for cream puffs. Put through pastry bag 1/2 to 1 inch wide, 3 inches long for eclairs.
    - Bake in very hot oven (450 F or 232 C) for 15 minutes, then in slow oven (325 F or 162 C) 25 minutes.
    - Fill cream puffs with Cornstarch Pudding or sweet whipped cream.
    - Frost eclairs with Creamy Chocolate Frosting. Fill frosted eclairs with vanilla ice cream or cream filling. Makes 12 cream puffs, 1 1/2 dozen eclairs.
    Cornstarch Pudding or Blancmange
    3 tablespoons cornstarch
    1/3 cup sugar
    Dash salt
    1/2 cup cold milk
    1 1/2 cups milk, scalded
    1 teaspoon vanilla
    - Mix cornstarch, sugar, and salt; combine with cold milk. Gradually add hot milk.
    - Cook in double boiler, stirring until thick; cover; cook 15 to 20 minutes. Add vanilla.
    - Pour into individual molds, rinsed with cold water; chill until firm. Serve with fresh or canned fruits, cream, or pudding sauce.
    - If pudding isn't to be molded, increase milk to 2 1/2 cups. The same amount of arrowroot or 6 tablespoons flour may be substituted for cornstarch. Makes 6 servings.
    Creamy Chocolate Frosting
    1/4 cup water
    2 tablespoons butter or margarine
    1/2 teaspoon vanilla
    2 1-ounce squares of unsweetened chocolate, melted
    2 cups sifted confectioner's sugar
    - Heat water and butter; add vanilla and chocolate.
    - Add confectioner's sugar; beat until of spreading consistency. Will frost tops and sides of two 8-inch cake layers.

      I love profiteroles (eclairs), ❤ but I don’t like sweets, so I fill them with salmon mousse that you cooked in the previous video 😊

    Lovely! Your chocolate sauce needs more confectioner's sugar to make it a bit more thick.

    An absolutely fantastic trick I learned with filling piping bags is to stand the bag in a suitably sized glass or jug. Then you have your hands free to get the mixture (whether it's pastry, icing, mousse or whatever) off the spoon and into the bag! So simple, so effective.

    Please please please don't stop your cooking show. I absolutely loved this and cannot possibly wake up on a Sunday not to see the newest! You give me the courage to try and my family thanks you! Not to mention how much I enjoy cooking with you! you are not pretentious at all and I don't feel like a failure if it doesn't come out "perfect" like the hosts. You keep it real. I would love to see 40s recipes next as that is the era I'm personally stuck in. PS: I love seeing the sparkle in your eye when your husband enjoys what you've made. All men should feel as lucky.

    A little trick for piping bags: Spiral the end of the piping bag a bit and put it around your index finger or middle finger. That way you can hold it with one hand an don´t have to look out for dough dripping out at that end. Oh and if you want to pipe circles: Hold the piping bag vertical and straight above the tray. Only start lifting, when your piping bag is about to "drown" in dough. (like macarons are piped). For the eclairs do the same, but move slightly (while always keeping the bag straight vertically). This way you get circles and ovals without any problems.

    Sage I just found your channel our family returned to Canada in 1976 after spending two and and half years in Australia. I love watching your shows particularly your Christmas Shows as I had 2 years as a teenager there for Christmas.     This was my Mama's Go-To for Cream Puffs. She chilled her Blancmange & her Chocolate Frosting was thick & fudgy. We loved these bites of Heaven. She would make them once per year. 🥰😋

    Yes Please more "Dining through the Decades!" I absolutely loved this series, and am so very sad to see it end. I love vintage cooking. To me its like going to grandma's house. It would be cook to see either the 40's or 60's to early 70's. Bloopers at the end were cute. We've all had those kinda accidents. Of this series, what was your favorite video to make, and food to eat? They all looked so yummy, and the videos were all so much fun. :) Thanks Sage!

    When I make these I use instant vanilla pudding as a filling and melt chocolate with a bit of butter and just drizzle across the top. So good!

    Your videos are so informative and I especially appreciate you turning certain loader noises down or in favour of gentle music. As this means I can watch from the comfort of my own bed while my baby sleeps too, without the need to mess about with my volume.

    This series was so much fun! You used my mother's favorite cookbook she was an excellent cook) so it brought back great memories! The corn starch pudding was a family favorite. We would put cookie crumbs on top. More vintage cooking please!!!!

      @@SageLilleyman Yes, all while making this I thought of the lovely eclairs I had at my wedding reception. The chocolate on top was nice and thick.

      You could just melt a bit of coconut oil or shortening in the chocolate to get a soft, but still thick consitency.

    Thank you so much for this series. The cream puffs are what I always thought eclairs were, at least I always had custard filled ones. Perhaps that is a Northeast part of America thing. I think I shall make your recipe for a group of friends once everyone has had their vaccinations.

      They usually are filled with whipped cream or a more light filling, not only custard. I think that´s only the american varietion of it, I have never seen them filled with custard in Europe (at least where I live and traveled).
