Frequent Charleston a lot. Hit this spot weekend of my wedding - what a way to start the wknd. Loads of high quality food scene in the city in such a concentrated area, so to stand out - it's quite impressive. Need to revisit this spot!
I appreciate this chef. Unlike a lot of these pompous and pretentious restaurant owners presented on this channel, this chef actually discusses the food, the menu, the staff, the cooking and where ingredients are sourced...............not the "story" or "message" or "canvas they paint their picture on" or "aura of the space" and then serve strange and pitiful little morsels of what they refer to as food at insane prices. Its like bro, if you wanna be an artist, then go be an artist and leave the cooking to the cooks. This guy is actually someone who understands his role as a restaurant owner and chef and acts accordingly. Kudos to him. The line outside tells me the food is amazing as well.
props for being innovative and being genuine. opening a restaurant is one thing....opening a restaurant and creating a template or platform for other sou chefs to one day step up and take it over is next level.
the best FOOD i have ever eaten in my entire life was fresh caught Mahi Mahi, walked into a Mexican Restaurant in Puerto Vallarta and gave them the fish that we caught that day and they cooked it a handful of ways. Fry, Grilled, Baked. I was amazed how fresh fished tasted.
For anyone that cares those portable AC units have a condensate tank that needs to be emptied. If it’s really humid you might have to empty them 3-4 times a day to keep them running or run a line to a drain.
I go to school down the street and saw a huge line for the last couple months everyday. Now I know everyone wants some fresh seafood, will have to check it out sometime

This is just a fancy expensive Michelin-fied Fish Camp. Just go to a normal Fish Camp spot, they're usually adjacent to a wholesale fish market. The food is incredible and affordable.

Scallion and ginger are strong flavors, but they're aromatics. Top notes. They ride on top of the fish rather than competing with it. You get to taste all of the components. Just like how the vinegar and wasabi in a piece of sushi are strong flavors, but they elevate the taste of the fish rather than covering it up.

Best seafood I've had was on Boracay, Philippines, You walked around the fish market, choose whatever you wanted, then you went to the food stalls and they'd cook what you brought with whatever fresh produce they had that day, Amazing stuff.

Very common way to eat it in Hong Kong cooking. They steam fish and put ginger scallion oil which flavors but doesn't cover up the flavor of the fish.
