    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the UA-cam channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via UA-cam videos, her cookbook, and cooking classes.     What I love about Pai's programmes are that she gives you little tricks that make cooking easier (like processed meats don't stick to wet hands) or (wash out pots with cold water or the meat cooks and sticks on the utensils) hahahaha. But then she always pays attention to the texture of the food with little tricks too ......Her authentic tasty recipes are a real treat and even a person who cant cook like me can make tasty food that edible !!!!......Great work Pai. Your enthusiasm is addictive !

    I make Tom Yum Noodles! I use tom yum paste to braise chicken, then add shallots, veggies, and soaked cellophane noodles. Topped with cilantro and lime. Probably not traditional Thai (I'm Chinese), but I just love the flavors.

    A fried or poached egg works so well with fried rice dishes. I especially love it with pork belly. A spoonful of fried vegetable rice with braised pork belly and a little egg with a semi runny yolk is the most delicious thing you can put in your mouth I reckon.

    Hello! Tom yum Goong or Tom yum fried rice are some of my favorite Thai Dishes. Unfortunately, i am running out of stock my favorite Chua Hah Seng Chilli Paste since travel ban cant buy them in Bangkok. I made this with little deviation of extracting flavour from shrimp head to make it tastier

    I've made a lot of Thai dishes in the past, however, I never would have thought to combine the two recipes together (Tom yum + fried rice) ! Thanks Pailin for providing the inspiration and know-how for your viewers to replicate this recipe! :D

    I am currently in love with Thai food. There is this really good Thai restaurant in my area. I tried out their Pineapple Fried Rice, Basil Fried Rice, Wild Pork, Pad Thai, ... I fell in love with Thai food!
    You know, I grew up in Vietnam so all of the flavor of Thai food is really familiar with me.
    I start to learn cooking Thai food because of you!
    You're so nice, and your videos are really easy to follow!

      +Blair Waldorf I beg to differ. Thai and Vietnamese cuisines essentially use the same ingredients but employ different methods of cooking. Judging from your saying Vietnamese cuisine has less complexity in flavors, it is evident that you have not experienced authentic Vietnamese cuisine which vary vastly from North to South, geographically. I happen to be an enthusiast of traditional Vietnamese cooking and let me tell ya, ditch your neighborhood Viet restaurant and buy a ticket to Saigon instead, the ingenuity of how the Viets marry the flavors will blow your mind away.
      Of course, this is by no means taking away the brilliance of Thai cooking.

    3:47 - FYI, serious eats tested various ways of preparing rice for fried rice and the fastest way is to cook it (1:1 ratio of rice and water) then after it's cooked, lay it out on a baking tray and direct a table fan over it for 2 hours, flipping it every 30 minutes.

    I just cooked this. OMG! You cant buy a taste like this from a supermarket. I love Thai food but I haven't been there for about 20 years. I just cooked this and it was real Thai food. Absolutely delicious. Thanks for the vid and it also helps that you are very pleasing on the eye.

    I've only been able to find fresh galangal a couple of times, however I have been able to find jars of pickled galangal at pretty much every Asian market I've visited. Seems to work just fine if you can't find the fresh stuff.

    Just made this with my sister and it was soooooooo good. We didn't have chinese broccoli so we substituted it with some green beans we had in the fridge, and it was still really good :D

    CNN voted Massaman Curry as the no. 1 most delicious meal in the world! I have seen so many variants of Massaman Curry on UA-cam, (one guy just roasted grated coconut untill its really dark and then pounded it to a black oily paste in the mortar and added it to the dish). I would love to see a remake of your old Massaman Curry video u made in the past.

    There is an Asian grocery store in the New Orleans area that has fresh everything! Triangle, lemon grass, turmeric root, bitter melon.........etc, etc, including live tilapia and Dungeness crab! Spent so much money and had so much fun! Hobby, they had all the fish sauces you recommended too.

    I made this one and it was so amazing! The only difference is that I used the readytom yum paste that i usually use for soups but never knew you can make rice out of it as well! Thanks for the video! I regularly follow your channel and recipes

    It feels great to binge watch old hot thai kitchen videos! One interesting thing I noticed is that the way chinese broccoli is pronounce in thai is the same as that in vietnamese, which is "cải làn" =))

      Actually it's not. Ms. Pai just called it in Chinese name. Thai called it Kana (คะน้า), not Cai Lan.

    Non spicy but sour and savoury Tom Yam is actually very therapeutic. Btw Never Ever skip the galangal. Galangal is Life!!!

    i dont know if it is right or not
    but since i live in indonesia
    Galangal , lemongrass,& birdeye chili paste should be cooked first with a little bit of oil first to remove the raw/stinging aroma of it? we call it bau Langu , its when kind of our White , Yellow , Red paste ( 3 basic indonesian cooking paste , its made of variety of herbs nutmeg, shallots , garlic ,chili,ginger , galangal,coriander,tumering,red chilli ) isnt cooked well before keep or used. it has an unpleasant raw aroma. it happen for my friedrice basic paste (garlic shallot leek dried shrimp ) if it isnt fried for 15-30mins before keep or use , it will give u an unpleasant smell. and it will not last long in the container/fridge.

    Looks so good. Gotta try it tonight. I will only fry the egg before serving so that the yolk can be more runnier. Yummm!!!!!

    Oh my my this is so good, i remember having it at a restaurant when i was in Thailand. i tried to search how to cook it then i found your recipe. I made a rip off version of yours, oh well it was still good
