Morning Jon, Congrats on the new grill! During the week there is never enough time and if i want to grill, I fall back on my Weber gas. The wife and I were down in the Strip District Saturday and stopped at Strip District meats for the first time. That was a great experience, and I picked up a beautiful Delmonico for next weekend. How do you keep your Lockhart cover so clean? Will you make more videos using that grill? I want to find a way to elevate a brisket away from the fire pot (the 2nd shelf is narrow). I also am interested in adding a rotisserie to it.
I just put the cover in my shed when not in use. I will definitely be using the Lockhart again, it’s just due for a good cleaning, specifically the auger. Thanks for watching!
@@Beskar181I would probably just make it in the upper chamber honestly. You’re right, the upper shelf is pretty small. The other option would be to separate the flat from the point and smoking them separately. You’d probably be able to get them on that rack like that.
@HolySmokesBBQ I was thinking about raising some kind of rack on bricks, or getting another rack (or similar dimensions) to double the size of it. The upper chamber doesn't seem as reliable since you can't really control the temperature there.

That’s awesome! Yeah SDM is amazing, and it’s one of the spots where you can get my BBQ sauces and rub!
