녹차 크레이프에 딸기를 넣어 크레이프 케이크를 만들었어요~
초록과 빨강의 색감이 강렬해서 시선이 확 가고 크리스마스 분위기도 나는 것 같아요~
녹차 향이 가득한 크레이프와 딸기의 맛도 잘 어울리더라구요~
생크림에 화이트 초콜릿을 넣어 부드럽고 고급스러운 느낌의 크림이라 전체적인 맛의 조화가 좋은 것 같아요~
크림은 다양하게 좋아하시는 크림으로 바꾸어 만드셔도 좋을 것 같아요~
마무리로 딸기 퓌레와 물을 섞어 붉은 빛이 나게 만들어 딸기와 함께 올렸더니 딸기 향도 많이 나고 비주얼도 괜찮더라구요~
저는 15장을 사용해 살짝 높게 만들었는데 12장 정도를 사용해 낮게 만들어도 예쁠 것 같아요~
12장으로 만드시려면 레시피를 1/4을 줄여 만드시면 된답니다~

▶틀 사이즈 Mold size : 18cm
▶재료
달걀 4개
설탕 50g
소금 1g
박력분 195g
녹차 파우더 15g
우유 500g
녹인 무염버터 70g
화이트 초콜릿 150g
생크림 80g
생크림 400g
슬라이스한 딸기
따뜻한 딸기 퓌레 60g
젤라틴 3g
물 60g
▶레시피
1. 달걀에 설탕, 소금을 넣고 섞은 뒤 박력분과 녹차 파우더를 체 쳐 넣고 우유 150g을 넣고 섞는다.
2. 남은 우유를 모두 넣고 섞은 뒤 녹인 무염버터를 넣고 섞고 체에 걸러 냉장실에서 1시간 정도 휴지시킨다.
3. 약불에 팬을 올리고 반죽을 붓고 넓게 펴 익히고 뒤집어 살짝 더 익히고 식힌 뒤 18cm 틀로 자른다.
4. 화이트 초콜릿에 생크림(80g)을 넣고 전자레인지에 40초 정도 돌려 녹인다.
5. 생크림 (400g)을 휘핑하다가 거품이 올라오기 시작하면 녹인 초콜릿을 부으며 휘핑해 크림을 만든다.
6. 18cm 틀에 크레이프 한장을 깔고 크림을 바른다. 5장을 쌓고 크림을 바르고 슬라이스한 딸기를 올린 뒤 크림을 바른다.
7. 같은 방법으로 1번 더 반복해 쌓고 윗면에 평평히 크림을 바른 뒤 냉장실에서 3시간 정도 굳힌다.
8. 따뜻한 딸기 퓌레에 불린 젤라틴을 넣고 섞고 물을 넣고 섞은 뒤 굳힌 케이크 위에 체에 걸러 붓고 냉장실에서 1시간 정도 굳힌다.

195g Cake flour
15g Green tea powder
500g Milk
70g Melted unsalted butter
150g White chocolate
80g Heavy cream
400g Heavy cream
Sliced strawberries
60g Warm strawberry puree
3g Gelatin
60g Water

@@berthabighead369 tbh I made that cake and it tastes delicious. Because of green tea cake is a little bit bitter but you have there also sweet cream and sour and succulent strawberries so everything is amazing combination. So when you eat this, it tastes like super amazing cake with tea flavour
