My theory about Gus's past is that during the Pinochet dictatorship in Chile during the 80's he was an important military officer or someone very close to the leader and when the dictatorship fell he had to flee to Mexico.
Hank would dissuade the nervousness as not being ok with tracking a private citizen without a legal cause to do so. As far as he knows hank is doing this under the table. So his nervousness can be explained by walt not being trained to be essentially an undercover officer

Walt had no conscience to begin with, only personal desires. No other episode goes into Gus' past, so what I feel the rest of the story is won't be a spoiler. Gus must've originally been involved in the cocaine trade in Chile, but since they were competing with the Colombian coke business, he came up with bright idea of selling high quality meth instead. This is why Gus made sure there were no official records in Chile with his name on them. He put the other guy through school in Chile to become his cook. Gus & he were lovers, as Hector alluded to at the pool, when he blew Gus a kiss after he took a piss in the pool, saying, "Do you like what you see?" (I have no idea how Hector knew this about them.) When they described their product as pure & cheaper than cocaine, Don Eladio & Hector knew it would take alot of their profits away from them, so they killed the cook. I think he believes on some level that there may be an afterlife, but he accepts that, if there is, he's going to hell, and he has made his peace with it. Arrogance makes him think he is above morality, and pride and greed push him to do anything to get what he wants. It's in some ways worse: he knows what he's doing is wrong, but he doesn't care.
