A south Indian would faint at the bread n baking soda/ powder tips..always mix idli batter with hand..maintain temperature between 37-40 deg cel for perfect fermentation..

In north India temp is not always between 37 - 49 degree Celsius. This method will help in winters.
A south indian doesn't have to sustain less than 8 degrees of temporary!
