No need of yeast or baking powder or bread,just make the batter with 1:2 ratio that is one cup urad dal and 2 cups of rice with one small teaspoon of methi and see how naturally it ferments and taste is really natural. A south Indian would faint at the bread n baking soda/ powder tips..always mix idli batter with hand..maintain temperature between 37-40 deg cel for perfect fermentation..
You can add one of two green chillies while grinding the batter for more fermentation. Second after adding salt add one shacet eno. You will get lovely soft idlies More
I make using rice / dal in 3:1 combination n 1 spoon of methi dana soaked in water then grind all together lastly grind cooked rice a small bowl size and add to the mixture n keep it in microwave overnight for fermentation don’t move the container or shake it in between. after fermentation cook idli for 10 min in steam. Make sure to keep idli stand inside steamer once steam start coming from steamer .perfect spongy idly without baking powder n baking soda.

During winters I soak the rice n dal early morning and grind early by 4 pm... evening I keep it on warm ( not hot ) water for sometime and at night keep it wrapped in sweater or blanket till next morning.
I just wanted to share one of my tricks , I also add poha , but in case I don't have it I add three to four tablespoons of cooked rice and a teaspoon of sugar and I get the same results . please do try .
