    Great demonstration of how easy smash burgers are. I bought a Camp Chef flat top griddle about five years ago specifically for smash burgers. I like to put Hatch Green Chilis on the patty before the cheese. The cheese helps hold the chilis on. I subscribed long ago, so I don't miss any of your videos. Keep them coming !

    Great vid, thank you! I'm kinda obsessed with burger cooks. Several things I wanted to mention. My opinion is it's best to season the burger after the flip. That's because the salt in the seasoning will toughen the burger if it's allowed to penetrate the patty for any length of time as Kenji has proven in his videos. So, it seems logical to delay the application of the salt until the very last moment, which would be just before the cheese. The other thing is the feathering of the edges, which in my opinion certainly isn't mandatory - it's just a different technique which might be worth mentioning (I like it both ways). American cheese - I personally like American cheese provided it's limited to one slice on a burger. Two slices and the taste is not pleasant, in my opinion. Happily, provolone melts great and tastes great! Also - provolone may provide a little more of the umami experience since it has more protein per gram than American. More protein implies more glutamate. Finally - a touch of Dale's original steak seasoning may be worth a look. It has soy sauce in it which provides a lot of umami. Dale's on a burger mixed with italian dressing is one of Dave's family's secret ingredients on a burger (Dave of SnS). Thanks again!

    Say sir I made your chicken rub you showed us a while back. I’ve used three times now. Thigh and quarter on the gas grill and two Cornish Hens on the Weber kettle rotisserie. Just so you know, it’s really good.

    Yes sir I concur! The “will change your life” hyperbole for some reason doesn’t annoy me as much as other clickbait titles. Perhaps it’s because it’s obviously not true. Anyhow, my wife and daughter bought me a big Blackstone for Fathers Day last year and smash burgers are by far my favorite thing to cook on it although my wife still prefers a fresh ground chuck burger seared over hot charcoal. I don’t bother with smash burgers unless I first griddle some onions. They just take it to the next level. If you want bigger burgers 4 oz balls work fine, but you likely will need to scrape the patty from the side with your spatula which has worked fine for me. Thanks for the video and motivation to restore the griddle for the KJ I need to sell. Hope y’all have a good weekend out there. Looks like we have a whole week of great grilling weather in store for us here in TN! 🍻

    yeah but why would I wanna have a dripping mess? 2 patties is not a true smash , 1 patty with toppings to scale is a true smash and would avoid that massive mess that defeats the benefits of the smash , any burger can get a sear , only a smash can provide a clean and comfortable eating experience that allows you to have more than 1 , giving you options to eat different variations in the same sitting .
    looks good of course , but , that plastic cheese I would swap for a real cheese that melts and I would go to 1 patty for a true smash , thanks for sharing , we thank God for all food , but if we are talking true smash and an enjoyable experience , I must share this .
