Since you have a pickup truck, you might want to consider grabbing one of those small rolling jacks in conjunction with the factory bottle jack. I actually had to bring a standard floor jack to a family member one time because their factory bottle jack actually tipped over and almost dropped the car on them while changing a tire. The reason ended up being very uneven ground where they were working and the jack was sinking in the dirt. I tested the jack that came with my volvo a while back, i wanted to know for sure that i would be able to use it. By adding a 2 foot 2x6 board to put underneath the jack when deploying it, it was able to distribute the load well enough that it didn't sink and it kept it relatively upright when lifting. You could potentially flatten out a spot in the dirt by digging to make sure it was more level.
The lighting kit and water proof flares is an awesome touch. Where did you get those multi function lights? Those are the coolest, if you didn't need them for signaling, you could use the white light to fix something on the side of the road hands free. Additions? I keep extra antifreeze, potable water, and spare oil in my car. Also, cheap kitty litter, you can use it under a tire if your stuck in ice or snow.
