When the pipe contains enough water, the end is dropped into the top of the furrow and gravity causes water to flow through the siphon from the channel over the bank and into the furrow.
I use siphon tubes on my farm. You have to set the correct amount of siphons for the stream size you have. If you set too many, the water level will be drawn down, head decreases and discharge of each siphon decreases. If you don't set enough, the ditch fills up and eventually over tops and washes out the ditch. But if you have a consistent delivery of water over time, the discharge of the siphons will be constant.
You were using a good technique to 'steal' water again for irrigation. The water can be travelling for long distances, like 10 miles for your farm house. I think it is better to look back 'Karez' done by arabs in Baluchistan, Pakistan centuries ago for agriculture.
You use gravity and the downward slope to water the field. Unless you pressurize the irrigation pipes, this method is cheaper in materials ( no need for lard sprinkler system)

This does not always work, especially for higher embankments.
Water flows back as soon as you release the suction.
