    When I cook Pho, I always make a double batch so I can freeze half. Also, I just put it on the lowest flame and the smallest burner. But I've always learnt to par boil my bones to keep the stock clear.
    Also I've always added carrots and Chinese radish in it aswell.
    I've been cooking pho since I've been married, 13 year and I've always cooked it on a gas stove, recently on a induction for at least 8 hours min and Max 12 hours.
    Cooking it on a stove compared yo pressure cook make a deeper and richer flavour. And they way it slowly reduces, I find that make it taste better.

    You should wash the bone dust off of your beef cuts before cooking. The bone dust makes the broth cloudy. Some say ingesting the bone dust isn't healthy.

      Have been following his channel about the same time too. He is such a humble guy who is very clear in his instructions. Have tried many of his recipes and they all turned out great.

    it is important for the broth of pho to be clear, so we parboil the meats before roasting.

    Wash your meats first if you’re going to roast them instead of parboiling.

    a good source for learning about cooking is an old TV show called Good Eats with Alton Brown and in this case Season 7 Episode 5 True Brew IV-Take Stock gives you some good information on making stock and as to WHY you use cold water in making stock. as for me i use a pressure cooker for making bone broth and i find i get quite the extraction from the bones, so much so that they easily break apart when done. another tip, if the skin on the onions is nice and clean then leave it in the brew it will add to the color of the broth, especially chicken broth.

    Benji, try daikon instead of carrots. And they sell the packs of aromatics at the Asian market for pho that has all ingredients ready (cinnamon, annatto seeds, fennel seeds, clove, star anise). Stick the package in with your broth for that traditional pho aromatics. Nice job!

      Instant pot pressure cooker will give you the fattiest and richest broth. Quick too! 20 mins high pressure.

    I made a quick version of pho on the weekend I would love a recipe that’s quick ish and delivers the most bang I felt the ginger and onions was needed more for a quick one or maybe roasting them may have been better 🤷🏻‍♀️. Love this

    Carrots, celery and daikon would’ve been so good in that broth! That’s what I do. It gives it so much flavor. And you can even add whole shallots and garlic sooO good 😊 I always make my pho in the instant pot it gets the meat tender in about an hour.
    I would love to see you take on sio pao next!!! (Steamed buns)

    i do buy broth paste for Pho,and that’s good of You making your own homemade broth
    and its safe from other salty condiments that is selling from supah, and try adding a piece of star anise and whole peppercorns for Bulalo Soup or for making Hot Pho 🍲.

    Keeping the bones and meat in the water for 2-4 hrs than all the blood will be out and you won’t have to clean all the gunk.
