Really useful. Minor observations: Your recipe says 2 Tablespoons of oil ... but your carahi seems to have more? Also, maybe give a hint on how hot your stove should be. Some folks add channa to this...maybe mention that variation with a hint on when it should be added. Great job overall!🎉
I fry my spices but my Grandma never did. Her curries were the best I’ve ever had. I’m over here making green seasoning and frying masala but my curry still don’t taste as good as hers. Everyone has their own way of cooking their food. All that matters is that you love it and it brings you happiness and sustenance. Thank you for the recipe Mr. Matthew 👍🏽
I totally agree with you. My grandmother makes everything in the simplest way but somehow it is the sweetest food you will eat. The older generation has blessed hands. In the meanwhile I’ll add all these things for the added flavor. Thank you for enjoying and watching
Hi Matthew that’s looking delicious I always leave the skin in the mango I’ll have to cook your version and enjoy it to you and your family have a blessed Ram Janam tomorrow and a good finish to the Nawratri bye.
Hi Mathew, I just one question, is that amchar massala you put into the mango curry? If not can you please tell me what kind of Massala? Thank you so very much, I love watching you cook.

Great recipe, how much water do you add and how long do you simmer it for?
