I love this concept. I might not have the patience to do it myself but it is awesome watching you progress and build from literally nothing but Arnold the Grass Block!
Accesing the nether is normaly impossible on vanilla oneblock, but what I did on my world is I made obsidian from ruined portals generate. This way the only way to go to the nether is to obtain a diamond pickaxe from the toolsmith. I will send you the datapack if you want.
I get how he's going to act up until a certain Point , he's going to grind bones and wait for snow foxes to spawn for the low chance that they hold emeralds in their mouths, he's going to slowly grind the emeralds and then when a wandering trader shows up he's going to buy moss, use the bones he's been grinding for bonemeal and use it on the moss to get the azlea trees (or whatever it's called), he'll have access to wood and he'll have rooted dirt to be able to start farming, but what now? To progress further he's going to need obsidian or lava (to make it to the nether) which are impossible to obtain, I can only imagine him having an end portal room somewhere in his world so he can actually make it to the end and finish the series and use the lava there to make it to the nether
And going to the nether is very crucial if he's trying to get to get diamond armor, he can get gold by killing zombified piglins and then use it to make golden apples (he's supposed to have actual oak trees and apples by now) so he can bring a witch and zombie villagers to cure and start trading with them to obtain pretty much everything he needs in the series
UA-camr Mud Flaps have had this problem in his one block world (but he's started with bonus chest). He used weird construction to break Java's code and recreate missing chunks by generating them again. He got end portal room this way. But for nether he used April Fools snapshot to go to the moon and grab lava from there, but i think Buget will find another way. I cannot really think of the way he can get lava or at least cobblestone for pistons which are used to break Minecraft's code.
He's never going to get lava because it's impossible, but he can buy a water bucket from a trader and use that to get water which eventually leads to drowneds, a lightning rod, piglins, and then gold which he can cure villagers with.
