Talking of different curry recipes other than Balti, many years ago I had a chicken Jaipur in Carlisle and it was one of the most memorable curry’s I have ever had and not had one like it since. Any chance of re creating that one.

So have I, Has the paint come off yours, Mine come off and made my Balti black. I done some research and the coating could be harmful? not sure if I should carry on using it. I see Al's Balti pan has done the same.
Hi Al, recently cooked a curry using mutton. It's easily available where i live so thought to give it a try as i was getting a bit fed up of chicken. Came out amazing, take a bit longer to cook, i used a slow cooker but worth the wait. Not sure if you've ever used mutton?
Al, I love your videos mate! I especially like the footage shot inside the restaurants, as its always fascinating to see them work and what goes into a takeaway. I'll be honest, I appreciate that the gas burner and other apparatus you use will produce the best flavour, but for me this makes me feel like this isnt really a dish I can make. When you originally did these dishes on your hob at home, I felt I could relate more and this would spur me on to use your recipes and experiment. I know everyone's different, but I really hope you can do some more kitchen videos with pans and apparatus we all find in our cupboards soon! :)

Been searching for that Balti flavour for years and have numerous books etc and I have never been able to create anything close to that Balti restaurant flavour! What am I doing wrong?
Hi Al. I must admit, some years ago you made a disparaging remark about my home city Birmingham and I unsubscribed in a hissy fit (I had had a drink at the time). I continued to watch your videos however as you are a bloody good curry chef. I would love to taste your food. I am delighted by the Birmingham content recently and the respect you give to this unique aspect of the curry cuisine. I have resubscribed and apologise for my petulant behaviour previously.
Think the Brummies gave kept with their curry tradition like Leicester. I’m a Manc and we once had a thriving Curry strip in Rusholme…but alas, it’s not like it was unfortunately. However, thank you Al for all your BIR curries which are delish having cooked a few of them.👍🏻
Al can I ask , in the video for the base gravy 2 you said u was using a 5l stock pot but on the list of items you use the link sends me to an 8.5l stock pot, can you confirm what one is in the video please
See the video description, Al links to them. They're a bit mental heat-wise, I only use mine outside now because it kept setting off the kitchen heat rise detectors.
@@davekitson1180 well a good curry is all about the sauce taste so the meat or veg is secondary. I’m not a strict veggie but can’t stand the look or raw chicken lol.
I followed this to the letter but cooked in an aluminium pan and I have to say it was the worst curry I have ever made..... sorry Al. It was just so bland and it has to be down to the minute amount of spices added.... it was like eating base gravy 😢
no as a regular stove only have single ring burners. I have a rangemaster, which does have a double ring for wok cooking, which is better, but still not as good, hard to get the flame to ignite the oil.
Just finished this off now.. amazing Balti! I didn't have anyone base curry so I just added a little water and extra tomatoes. Next time I'll try king prawns. Thank you Al.
@@d1ppaz there is no comparison, water is tasteless and the base as loads of flavours. If you can’t be bothered to to even make that then there really isn’t any point in making curry’s

It’s only BIR that requires base gravy and that’s to allow restaurants to cook mass amounts of dishes quickly. There’s plenty of ways to cook curry’s without base. Also, base gravy is a bland neutral flavour.
The answer to the question whether water compares to base gravy is no. The gravy gives a depth of flavour and also reduces down to that typical balti consistency
Head over to the "Curry Guy" he will show you how to make a large batch of base curry gravy you can freeze into portions so you don't have to keep making it every time you cook a a curry. personally I don't use base curry gravy. Check out the "Balti Brothers" the Balti house Rishton they will show you easy 15min authentic BIR recipes without the grave, they are no fuss delicious Currys.
Of course! Just get a steel wok and not a Teflon one. The best place to get one and if you have any one you is an Asian wholesalers. Better and cheaper than anything you'd get from Argos for example.
