As for mayonnaise to replace butter on grilled cheese, I groan and wince at the suggestion. I tried it and decided it didn't want my grilled cheese to smell and taste like vinegar. Therefore, it's only BUTTER for me (sometimes olive oil). By the way, be on the lookout for Kraft Cracker Barrel Extra Sharp Cheddar Slices. It's an 8-oz pack, 8 thick slices (1 ounce each), and currently only $2.98 at Walmart.
Going to say that one of the best grilled cheeses I've made, might sound a bit off. I will shred up a mixture of American and mozzarella, while making a garlic butter crust and 2 plain American slices directly on each slice before the mixture. I will set it out, showing the creamy gooiness in the center. Easily I can serve hundreds a day at my job. Before trying it this way, I always thought mozzarella would be a bad idea, but it mixes well and tastes great.
I make some wicked good grilled cheese sandwiches, but your idea will take mine to the next level…thanks to you. Also, it’s cold in Tampa, but I’m using my Camp Chef…unless it snows here, then I’m out. Great video, stay warm.
I live in Wisconsin, I cook outside year round! I owned a catering business for 5 years, I had a mobile charcoal grill. I did a steak dinner when it was -25 with a 30 mph wind! That was cold! 40 degrees isn't bad Lol!
Both look great, but I love the parm crust! If you can find smoked gouda, give that a try, it's a favorite of ours. I need crispy, too, a melty inside but snap on the bite... And tell the Mrs. it's in the upper 30s here in NY this weekend, and I'm still cooking outside!
Would be great if you added a surface temp thermometer and periodically mentioned the readings. An experienced cook like yourself can adjust knobs based upon how the food reacts but we beginners need a little guidance
@Flat Top King - On the olive oil and butter... I read a book about The Beastie Boys. They included recipes for some of their favorite things. One was a breakfast egg dish (basically scrambled eggs, with fried eggs on top of them, then crumbled hard boiled eggs on top) they cooked the eggs in butter and olive oil. I have been making my eggs like that ever since. Very good.
I started buying cheese from the deli and having it sliced. the taste is far and away better than any of the packaged cheese. boars head is my favorite brand.
If u break down mayo ingredients it has a lot of oil. Some like to spread the outside of the bread with mayo. It’s actually does give a great crust but I’m not a fan of the flavor. I like the butter taste way more.

Ya there is, in the thickness of the cheese. The wrapped slices can be displayed without refrigeration, where the unwrapped has to be refrigerated. Also, one is classified as a cheese food, the other is a cheese product and yes, there is a difference between the two.

Just sayin'........ Gotta love us some Gruyere, and you're right about it kicking up the flavor profile of mac n' cheese. When folks ask me for a flavor comp I usually say it resembles a good Swiss without the holes.....just a bit of "tang". Yum...........

Love this grilled cheese recipe and yes we flat top grilling in Southern Indiana where it is in the 20's in the morning and starts dropping to the 40's by 3pm. Grilling all year round bruh! Just get your wife some gloves like the wide receivers wear in cold weather and she'll be all right! I made my compound butter like you do! Soooo good!! Keep on keepin on! Love your videos!💯👊
I like the traditional grilled cheese using butter! Dipping it tomato soup. That crunch was excellent and I liked the idea of using parmigiana cheese on the outside crust! Nicely done Neal! ( I’m smoking some ribs it’s about 35 degrees in Buffalo) Cheers!

No need for olive oil and butter if you use spreadable Land O Lakes Butter with Olive Oil (not Canola) combined.

Kraft doesn't do anything different between individually wrapped cheese than they do with packaged cheese that's not wrapped. Sorry to tell you.
