    "Most people prefer more fruity ..." This simple statement had never occurred to me. So if the goal of a food + wine equation is for the amazing fruit flavor of a wine to come through every time, then we're just mitigating the wine's other structural components - sweetness, acid, tannins - based on a few chemical rules (sugar in food makes wine taste more acidic, fat likes tannins, etc). Suddenly it all makes a lot more sense - thank you!

    I found this video really helpful in laying out some basic fundamentals for pairing. Even if this is all you know you can pair without fear.
