  • Today, I would like to show you how to make Polish Sour Rye Soup in Polish called Żurek.
    Sour rye soup in Polish called ‘żur’ (or diminutive: 'żurek') is a soup made from fermented rye flour (similar to sourdough) with polish white sausage, bacon, mushrooms and vegetable, is a specialty eaten for Easter.

    1. Sour rye soup starter
    2. 0.5 pound of white sausage (bratwurst)
    3. 0.3 pound of polish sausage
    4. 3-4 pieces of bacon
    5. 1 chopped onion
    Broth:
    5. 1 purple turnip
    6. 1 small onion
    7. 3 carrots
    8. 1 parsnip
    9. 1 celery
    Extra:
    10. 7-8 pieces of dry mushrooms
    11. 2 garlic teeth
    12. 1/2 lemon
    13. marjoram
    14. salt, pepper
    Garnish:
    15. 1-2 hard- boiled eggs
    Its name comes from German language - 'sūr', meaning sour and it is a star not only in Poland but also in Slovakia, Czech Republic and Belarus. Żurek is traditionally eaten for Easter, but I like to make it when it is very cold outside. During winter it is my go to dish, I make a lot of it and have lunch for 2 -3 days, it tastes especially exquisite after hiking, skiing and snowboarding day served in a loaf of bread or on top of boiled potatoes. In my opinion.
    The soup varies from region to region for example in the Silesia region (Śląsk) - sour rye soup (żur śląski) is poured over mashed potatoes. In the Podlaski region, it is common to eat it with hard-boiled eggs. In Krakow, you can try Żurek Galicyjski. This recipe is a mix of all few regional flavors.

    Love your recipe Polish Mama!
    I too put dried porcinis in my Żurek - they take most Polish soups to another level! But where you put lemon, I put dijon mustard, and/or ground horseradish. I like my Barszczyk spicy-hot but chilles don't go well with it IMO.
    Also I whiten my soup in the bowl, at serving time, with either sour cream or kefir and a dab of heavy cream if you're feeling rich :)
    To those who are new to the soup - if you want it to taste original Polish: use polish pork kiełbasa, smoked bacon and a lot of garlic and majoram. Re: the Gralic: For a family sized pot I use up to a whole head of garlic, in stages: some for the soffritto, some for the stock, and finally: one thoroughly ground clove to finish before serving.
    PS I dig your technique, but a certain point I thought, frying the sausage was unnecessary - you have the fried Bacon. Too much of the caramelized flavours take over the subtle sour or the fermented flour base imo. rgds

      Thank you for your comment. Your’s sounds super tasty as well. Garlic and majoram are essential in Zurek! I think I will try the mustard next time sounds exciting.
      When it comes to sausage i like it with color :) and less fat.

    I'm from Uruguay. Fell in love with this soup the two times I went to Poland, so now I make it at home. Why not chopping the vegetables before cooking? Isn't it easier?

    Hi, thank you for the recipe. I made this yesterday including your version of the sakwas. It was great. Not like I have eaten in Poland, it was less sour. The sakwas was made in 5 days and i added lemon juice. I wonder how to make it more sour.

      Hi, I am grateful for your kind words. Sometimes it depends on the flour you buy, adding lemon juice or horseradish or more garlic could help. Also keeping it for longer.

      Hi Jenny, you welcome. For 8-9cup of stock (water made from sausage)which is 2l, you will need 2 cups of “soup starter”- 0,5- 0,6 l.
      If you buy the starter it is sold in bottles that are size 0,5 l.

    When I visited Krakow, they said they had a soup similar to Zurek but unique to Krakow and a bit different.. maybe you know what I mean? How is it called?

      Hello, thank you! From the top of my mind there is a soup called Barszcz Bialy, is it similar to Zurek but the started is for the soup is not based on rye flour - like Zurek but on wheat flour. Do you remember where you ate it? What restaurant?

      It is not typical for Krakow, both Barszcz Bialy and Zurek origin from Belarus, and are very common for Slask- Silesian region. I was looking into the typical soups for Krakow, and ... there is Zurek po krakowsku which refers to the soup starter, that is prepared in specific way.

      The recipe for sour rye soup in Krakow is in the Archives of the City of Krakow: “ Sour rye soup in Krakow: - three handfuls of rye flour - a quart of water after cooking - small bread called Prądnicki or Krakowski - garlic clove for flavor - a pot of white (wheat) flour Softened everything in a stone pot, Set aside for two nights near the stove (...). The sour rye soup prepared in this way also tastes great when cooked on smoked or sausage, served with mashed potatoes or an egg.”

    Aged Żurek its much better. I will be 51 years aged in 2 weeks :) lekko brytyjski akcent slysze u Ciebie. Polskiego akcentu nie slysze wcale. Tutaj na Alasce czesto mnie pytaja czy z Rosji jeste. Muj akcent nie zniknie
